___________________________________________________ S PICY CRACKERS Jerri Moore ___________________________________________________ 1-1/4 c canola oil 1 package ranch dressing 2 T crushed red peppers 1 T creole seasoning 1 box of your favorite saltines DIRECTIONS: In bowl, mix all ingredients together. In a large zip lock bag & dump all crackers and pour mixture over crackers. Zip, then shake and turn over till all crackers are covered. Let set for 10 mins. Flip and shake again and let set another 10 mins. Do this 4 times and then dump into dry zip lock bag. ___________________________________________________ F ELIX HUNTER’S CINNAMON PICKLES Rosemary Hunter Klein ___________________________________________________ 7 lbs large cucumbers 2 c vinegar 1 c lime 2 c water 1 gallon water 10 c sugar 1 c vinegar 8 cinnamon sticks 1 -- 1 oz bottle red food coloring 1 -- 4.5 oz bag red hot cinnamon candy 1 T alum DIRECTIONS: Wash, peel, cut centers from cucumbers, removing all seeds. Cut into 1/4” slices, resembling doughnuts. Soak in 1 cup lime and 1 gal water for 24 hrs. Pour off & wash cucumbers. Cover in ice water & soak 3 hrs, then pour off. Mix 1 cup vinegar with food coloring & alum with enough water to cover cucumbers. Cover & simmer 2 hours. Pour off and throw liquid away. Bring 2 cups vinegar, 2 cups water, 10 cups sugar, red hot candy & cinnamon sticks to a boil. Pour over cucumbers & let stand 24 hours. Bring sauce & cucumbers to a boil. Pack into canning jars. Seal & process in hot water bath for 15 mins. ___________________________________________________ M OMMA’S CARAMEL SAUCE FOR SWEET POTATOES Gina Moore __________________________________________________ 1 tsp Vanilla 2 c sugar 1 c butter 1 c Pet milk 1 c toasted pecans DIRECTIONS: Melt sugar & butter to deep tan in large heavy skillet. Add milk slowly and cook 2 mins. Add vanilla & pecans. Yield is for 3 sweet potatoes. ___________________________________________________ R ASPBERRY VINAIGRETTE DRESSING Rosemary Hunter Klein ___________________________________________________ 1/2 c olive oil 3 T red wine vinegar 2 T raspberry syrup 2 packets Stevia A few walnuts (optional) DIRECTIONS: Whisk together & store in a jar. Shake before serving.
