___________________________________________________ A UNT BARBARA’S CHILI SAUCE Stacey Earle ___________________________________________________ 1 peck 12 - 14 tomatoes 2 lbs brown sugar 1 lb (2 bunch) celery 1/4 c salt 1 quart small onions, chopped 1 quart cider vinegar 1/2 T cloves ground 1 T dry mustard 2 sticks cinnamon DIRECTIONS: Scald tomatoes & peel & cook 15 mins & drain off 1/2 of the juice. Chop remaining veggies & add tomatoes; simmer about 1-1/2 hours. Tie spices in cloth bag; add with remaining to tomato mixture; continue cooking 1-1/2 hrs. Remove spice bag, seal in hot sterilized jars. Makes 6 pints. ___________________________________________________ C AFE DE PARIS BUTTER Don Cain ___________________________________________________ 2 sticks unsalted softened butter grated zest & juice of lemon 2 shallots splash of worchestersire 1 clove of garlic chopped 4 T chopped parsley 2 anchovy fillets salt & pepper to taste 2 tsp dijon mustard DIRECTIONS: Mix all ingredients together & place on a sheet of plastic wrap. Roll into a cylinder shape & twist ends of roll to compress slightly. Refrigerate until firm.
