___________________________________________________ M INT ICED TEA Doris Sanders ___________________________________________________ 2 c boiling water 2 tbsp instant tea 2 sprigs mint 1 c sugar 2 cups cold water 1/2 c lemon juice DIRECTIONS: Steep 10-15 min. After steeping, add 2 cups cold water, 1 c sugar, 1/2 c lemon juice. Refrigerate for several days to improve flavor. ___________________________________________________ M AMAW’S ORANGEADE Lisa Orange ___________________________________________________ 1 can frozen concentrated orange juice 1 can frozen concentrated lemonade 1 1/2 c sugar 1 c hot water DIRECTIONS: In a large pitcher, add sugar & hot water, stir until dissolved. Add frozen orange juice, stir until dissolved. Add frozen lemonade, stir until dissolved. Fill the pitcher with cold water, stir well. Chill in the refrigerator for at least 2 hours. ___________________________________________________ P ECAN CRANBERRY GOAT CHEESE Melinda Kemp Rufin ___________________________________________________ 1/2 c finely chopped pecans (toasted) 1/4 c finely chopped dried cranberries 1 tbsp chopped parsley 1/8 tsp cinnamon 8 oz plain goat cheese log 4 tbsp honey or hot honey crackers for serving Mix together pecans, cranberries, parsley, & cinnamon. Spread on a large cutting board. Roll cheese log into coating mixture, press into log to cover. Transfer log to serving platter along with remaining coating mixture. Drizzle cheese log with honey. Serve with crackers. Very festive for holidays. Best at room temperature. ___________________________________________________ P ECAN CRISPS Joan Dowlen ___________________________________________________ 3/4 c brown sugar (packed) 2 T self-rising flour 1/2 tsp vanilla 2 c pecan halves 1 egg white DIRECTIONS: Preheat the oven to 250°. Place parchment paper onto a large cookie sheet. Beat egg white until stiff. Add brown sugar, flour, & vanilla. Stir. Add pecans, stir until coated. Spread on parchment. Cook for 30 min at 250°, then turn the oven off. Allow pecans 30 more min to crisp before removing from the oven.
