___________________________________________________ C UCUMBER & ONIONS Shirley Noe ___________________________________________________ 1 cup apple cider vinegar 1/2 cup sugar 3 to 4 large cucumbers 1 small onion 1 tsp each of salt & pepper DIRECTIONS: Peel & slice cucumbers. In a small pan, add vinegar & sugar. Cook over med heat 6 to 7 mins just enough to dissolve sugar well. (do not boil) Remove from heat, let cool. In a bowl, add cucumber, onions, salt, pepper, add vinegar mixture stirring gently. Put in refrigerator 1 hour before eating just to chill it. ___________________________________________________ P ISTACHIO PUDDING SALAD Rosemary Hunter Klein ___________________________________________________ 1 3oz pkg instant pistachio pudding 1 20oz can crushed pineapple 1 8 oz container Cool Whip, thawed 2 c minature marshmallows DIRECTIONS: Combine pudding & pineapple. Fold in Cool Whip & marshmallows. Chill & Serve. ___________________________________________________ G ARDEN ROTINI PASTA SALAD Glynda Johnson ___________________________________________________ 1 16 oz box garden rotini pasta, cooked 1 large cucumber quartered & sliced 1 medium can black olives sliced & drained 1 pint grape tomatoes halfed 1/2 red onion, chopped 1 bottle zesty Italian dressing 1 T red wine vinegar 2 T sugar DIRECTIONS: Make sure pasta is cook. Add dressing , red wine vinegar, & sugar together. Pour over pasta & mix well. Add remaining veggies, Chill at least 2 hrs before serving. The longer it marinates, the better it is. ___________________________________________________ G RAPE SALAD Mary Grey Jenkins ___________________________________________________ 1-1/2 lbs seedless red grapes 1-1/2 lbs seedless green grapes 8 oz cream cheese 8 oz sour cream 1 cup white sugar 1/2 cup brown sugar 1/2 cup chopped pecans or walnuts DIRECTIONS: Wash grapes & remove stems. Leave grapes whole. Mix cream cheese, sour cream, & white sugar & fold in grapes into mixture. Mix brown sugar & nuts, top grape mixture with sugar & nuts mixture. Chill until serving.
