___________________________________________________ H ONEY PECAN CHICKEN WALDORF SALAD Gerald Greer ___________________________________________________ 1/2 cup chopped pecans 2 T raw local honey 2 cups rotisserie chicken breast cubed 1/2 cup mayonnaise 1 cup grapes, halved 1/2 cup vanilla yogurt 1/2 cup dried cranberries 2 tsp lemon juice 1/2 granny smith apple cored/cubed DIRECTIONS: Preheat oven to 325 degrees. Spread chopped pecans on to baking sheet. Roast pecans until they are fragrant & browned..3 to 5 mins. Remove and let cool. Lightly toss chicken, grapes, cranberries, apples, pecans, & honey in a salad bowl. Whisk mayonnaise, vanilla yogurt, & lemon juice in a separate bowl. Pour dressing over salad & toss again to coat. ___________________________________________________ H OPPIN JOHN’S SOUP Jennifer Lovell Ensley ___________________________________________________ 1 lb turkey sausage 1 box Uncle Ben wild rice w/ seasoning 2 cans black eye peas 2 cups chicken broth 2 cups diced petite tomatoes DIRECTIONS: Cook turkey sausage. In a sauce pan, add rice & seasoning packet, beans, tomatoes, broth, & sausage. Bring to boil & cook for 20 mins. ___________________________________________________ I NA’S FROZEN FRUIT SALAD Ryan Elizabeth Pew ___________________________________________________ 1 6 oz frozen lemonade concentrate 1 12 oz frozen orange juice concentrate 2 cups water 1 cup sugar (or granulated Stevia) 1 10 oz package frozen strawberries 1 15 oz can mandarin oranges, drained 1 20 oz can crushed pineapple with juice 3 sliced bananas 1 cup blue berries (optional) DIRECTIONS: Mix lemonade, orange juice, water, sugar (or stevia), strawberries, mandarin oranges, pineapple, bananas, & blueberries together & freeze in a 9 x 13 container. __________________________________________________ F RANCE’S LAYERED SALAD In honor of Frances Hall ___________________________________________________ 1 head lettuce 1 T sugar 1 head cauliflower 1 package bacon bits 1 small red onion 2 cups mayonnaise 3/4 cup Parmesan cheese DIRECTIONS: Layer in order and cover. Set overnight in refrigerator. Mix well just before serving.
