___________________________________________________ T URBAN SQUASH Gayle Hill ___________________________________________________ 1 (3 lb) turban squash 1 lb bulk sausage 1 c chopped celery 1/4 c chopped onion 1/2 c sliced mushroom 1 egg, slightly beaten 1/2 c sour cream 1 c grated Parmesan cheese 1/4 tsp salt Parsley sprigs DIRECTIONS: Remove the “hat” as you would for a pumpkin. Remove seeds. Sprinkle cavity with salt. Place squash, cut side down, on a baking dish with 1” of water. Bake at 325° for 1 hour. Combine sausage, celery, onions, & fry until brown. Stir in mushrooms & undercook them. Drain off excess grease. Combine egg, sour cream, cheese, & salt. Stir well. Add egg mixture to sausage mixture, blend. Spoon all into cavity of squash. Place squash back into the same pan with reserve water. Bake 20-25 mins more & decorate with parsley & sliced mushrooms. ___________________________________________________ T HE BEST SQUASH CASSEROLE Jean Fort ___________________________________________________ 3 1/2 lbs yellow squash (crookneck-best) 1/4 stick salted butter 1 pkg Pepperidge Farm stuffing mix 1 T minced onion Dash of celery salt 1/2 tsp oregano 7 oz Velveeta cheese, cubed 1/2 tsp Italian seasoning Salt & pepper to taste DIRECTIONS: Boil squash until tender. Use a colander to drain well. In a mixing bowl, combine all ingredients & mix well. Pour into a buttered 2 1/2-3 qt casserole dish. Bake in a preheated 350° oven for 35-40 minutes. Top should be golden brown. ___________________________________________________ H OT PINEAPPLE CASSEROLE Peggy F. Miller ___________________________________________________ 2 (20 oz) cans pineapple chunks 1/3 c granulated sugar 1 c shredded cheddar cheese 1/4 c butter 1 sleeve Ritz crackers 3 tbsp pineapple liquid 5 T plain flour DIRECTIONS: Combine sugar, flour, & pineapple liquid. Add pineapple chunks, spoon into 8 x 8 casserole dish. Add shredded cheddar cheese. Melt butter, crush Ritz crackers. Combine butter & crackers, top casserole. Bake in 350° preheated oven for 30 minutes.
