___________________________________________________ B REAKFAST CASSEROLE Tracey Binkley Jernigan ___________________________________________________ 1 lb sausage cooked, crumbled 8 oz crescent rolls 2 cups mozzarella shredded 4 eggs beaten ¾ cup milk Salt and pepper to taste DIRECTIONS: Cook and crumble sausage. In a 13x9x2 greased baking dish, spread crescent rolls. Spread sausage on top of dough. Sprinkle cheese on top of sausage. Beat 4 eggs, add milk, salt and pepper. Pour over cheese. Bake at 425 degrees for 25 minutes or until eggs are set. ___________________________________________________ H AWAIIAN CHICKEN Elsa Gibbs Lockert ___________________________________________________ 2 lbs chicken cut into bite size pieces 1 cup pineapple juice ½ cup brown sugar 1/3 cup soy sauce DIRECTIONS: Combine pineapple juice, brown sugar and soy sauce. Cut chicken into bite size pieces. Pour the mixture over the chicken so chicken is covered well. Place chicken into a crockpot & cook on low for 6 to 8 hrs. Serve over rice or noodles. ___________________________________________________ M ANDARIN CHICKEN BREASTS Rosemary Hunter Klein ___________________________________________________ 6 whole chicken breasts, deboned 1 ½ cups hot cooked rice 3 T butter or margarine 1 T chopped parsley ¼ tsp rosemary, crumbled ¼ tsp basil, crumbled ¼ cup flour ¼ and ½ tsp salt ½ tsp paprika 1 ¾ cup chicken broth 1 T minced onion 2 T lemon juice 1 bay leaf 1 T cornstarch 1 can mandarin oranges 1 cup seedless green grapes DIRECTIONS: Sprinkle the inside of the chicken breasts with salt. Combine rice, 2 T butter, 1/4 tsp salt, parsley, rosemary and basil. Toss to mix, and spoon into hollows of chicken breast. Mix flour, ½ tsp salt, & paprika. Dip chicken into flour mixture and coat well. Brown slowly in remaining 2T butter. Stir in chicken broth, onion, lemon juice, & bay leaf. Heat to boiling, cover, let simmer for 25 mins. Remove bay leaf and chicken. Smooth cornstarch with a little cold water to a paste. Stir into liquid and cook, stirring constantly until thickened. Stir in mandarin oranges (drained) & grapes. Heat until bubbly. Spoon over chicken.
