___________________________________________________ B ROCCOLI BEEF PIE Lisa Orange ___________________________________________________ 2 cups chopped fresh broccoli 1lb ground beef 1 4 oz can mushrooms (drained) 2 cups shredded cheddar cheese 1/3 cups chopped onion 2 cups Bisquick mix ½ cup water 4 eggs ½ cup milk ¼ cup grated parmesan cheese ½ tsp salt ½ tsp pepper DIRECTIONS: Steam broccoli until tender (set aside). Brown ground beef & drain. Stir in mushrooms, 1 ½ cups cheddar cheese and onions. Remove from heat and set aside. Combine biscuit mix and water. Stir to form a dough. Add remaining ½ cup. Cheddar cheese. Stir just until blended. Pat dough into a greased 13x9x12 baking dish. Spread dough halfway up the sides of the dish. Spoon meat mixture over dough and top with broccoli. Combine eggs, milk, parmesan, cheese, salt & pepper, beating well. Pour over broccoli. Bake uncovered at 350 degrees for 35 minutes. ___________________________________________________ B AKED CHICKEN & RICE WITH BLACK BEANS Isabella Hendrickson ___________________________________________________ 1 10 oz package yellow rice 1 cup chopped onion ½ cup chopped green pepper ½ cup chopped carrot 1 T olive oil 2 cups cubed cooked chicken 1 15 oz can black beans (drained) 1 10 oz can Rotel undrained 2 cups grated Monterey jack cheese DIRECTIONS: Preheat oven 350 degrees. Prepare rice according to package directions. Saute onion, bell pepper and carrots in oil over medium heat 10 minutes or until tender. Combine cooked rice, onion mixture, chicken, beans, Rotel and 1 ½ cup cheese in a large bowl. Spoon into a lightly greased 3qt or 13x9 baking dish. Sprinkle with remaining ½ cup cheese. Bake covered at 350 degrees for 30 minutes. Uncover and bake for an additional 10 mins. ___________________________________________________ C HICKEN CASSEROLE Betty McCool ___________________________________________________ 1 chicken cooked tender 1 box spaghetti cooked 1 green pepper 1 onion 1 cup pimientos 1 cup grated cheese 1 can cream of chicken soup DIRECTIONS: Mix all ingredients together, pour in a baking dish, top with cheese. Bake at 350 degrees for 30 minutes to 40 mins.
