_________________________________________________ A UNT NU’S APPLESAUCE BREAD Valerie VanOstenbridge _________________________________________________ 2 c. sifted all-purpose flour 3/4 c. sugar 3 T. baking powder 1 tsp salt ½ tsp baking soda ½ T cinnamon 3/4 c. applesauce 1 egg beaten 3/4 c ground sweetened cranberries 2 T melted butter DIRECTIONS: Sift dry ingredients together. Beat one egg, mix applesauce with sweetened cranberries, mix egg into apple cranberry mixture. Combine dry and wet ingredients with melted butter. Spray a large loaf pan with Pam or use butter. Fill and bake at 350° until golden brown, approx 30 to 45 minutes ____ _______________________________________________ B ANANA BREAD Melinda Kemp Ruffin ___________________________________________________ 1 1/2 c. all-purpose flour 1 tsp. baking soda ½ tsp. salt 1 stick melted butter 1 c. sugar 1 tsp vanilla 1 c. mashed bananas 2 eggs (about three whole bananas) ½ c. sour cream 1 c. walnuts or pecans optional 1 tsp. cinnamon optional DIRECTIONS: Preheat oven to 350° grease & flour a 9 x 5 loaf pan. In a medium bowl, mix together flour, soda & salt. Set aside. In a large bowl, mix together melted butter & sugar. Add eggs, mashed bananas, & sour cream. Add vanilla to the butter/sugar mix well, gradually. Add the flour mixture to the wet ingredients until just moistened. Don’t over-mix. Fold in cinnamon and nuts. Spread into loaf pan & bake for 50 to 60 mins. ___________________________________________________ E ASY BANANA BREAD Glynda Johnson ___________________________________________________ 1/3 c. vegetable oil 3 large mashed bananas 1/2 tsp. vanilla 3 eggs lightly beaten 2 1/3 cups Bisquick baking mix 1 c. sugar 1 c. pecans chopped DIRECTIONS: Heat oven to 350°. Mix sugar & Bisquick mix together then add oil, eggs lightly beaten, mashed bananas, vanilla, & chopped pecans. I cook these in 2- 12 cupcake muffin pans using cupcake cups. Spray lightly with Pam. Cook for 45 minutes or test with a toothpick. You can also use a loaf pan 9 x 5 x 3 & bake 55 to 65 mins.
