___________________________________________________ B ANANA BREAD Pam Jones ___________________________________________________ ½ c. shortening 2 eggs 2 c. flour 1 tsp. soda 1 tsp. vanilla 1/4 c. sugar 1/4 tsp. salt 3/4 c. nuts optional 5 bananas, mashed DIRECTIONS: Cream shortening and sugar. Add eggs & beat well. Add bananas, add the nuts & vanilla, and mix well. Bake in a greased tube pan about 300° for one hour. After baked, remove from oven & cover pan tightly with foil while bread cools (makes bread more moist) __________________________________________________ B ANANA BREAD (MARTHA STEWART) Susan Mock ___________________________________________________ ½ lb. butter 1 c. sugar 2 eggs 1 1/2 c. flour 1 tsp. baking soda 1 tsp. salt 1 c. mashed bananas ½ c. sour cream 1 tsp. vanilla ½ c. pecans chopped DIRECTIONS: Cream butter and sugar then add eggs. Blend flour, baking soda, & salt together, add to butter/sugar mixture alternately with sour cream, bananas, & vanilla. Fold in half cup pecans. Grease & flour a 5 x 9 x 3 loaf pan & bake at 350°F for one hour and 15 mins. Test with toothpick ____________________________________________________ D IABETIC EASY BANANA BLUEBERRY MUFFINS Mary Glasgow ___________________________________________________ 3 large ripe bananas 1/4 c. and 2 T. Splenda sugar blend 1 egg lightly beaten 1/3 c. melted butter 1 c. blueberries 1 tsp. baking soda 1 tsp. baking powder ½ tsp. salt 1 ½ c. flour DIRECTIONS: Mash bananas in a large mixing bowl & add Splenda & egg. Add butter & blueberries. Combine dry ingredients & gently stir into the banana mixture. Pour into 12 well-greased muffin cups. Bake at 375° for 20 mins. ___________________________________________________ 7 -UP BISCUITS Ann Robertson __________________________________________________ 2 c. of Bisquick ½ c. sour cream ½ c. 7-Up ½ c. melted butter DIRECTIONS: Add sour cream to Bisquick and mix. Add 7-Up & mix. Sprinkle Bisquick on the counter & Pat out dough to 1 inch. Use a biscuit cutter or jar to cut. Place melted butter in a 9 x 9 dish & put the biscuits on top. Bake at 450° for about 8 mins.
