___________________________________________________ H ADLEY’S FAMOUS HOT WATER CORNBREAD Hadley Williams __________________________________________________ 3 c. self-rising cornmeal 2 c. self-rising flour 2 T. sugar 1 c. hot water DIRECTIONS: Combine cornmeal flour, sugar and water. Let mixture thickened like concrete. Cover skillet with oil. Drop by spoonfull & fry until golden brown. DO NOT USE IRON SKILLET! Add 2-3 T to a cup of water & dip the spoon in this to make it easier to drop the mixture.. ___________________________________________________ C OUNTRY CORNBREAD (SOUTHERN) Shelly Stratton Jones ___________________________________________________ 1 ½ cups self-rising cornmeal 1 egg 3 T. warm bacon grease or 3 tablespoons melted butter 4 T. self-rising flour 2 c. whole buttermilk 2 T. butter Mix all ingredients & pour into a preheated iron skillet with the 2-tablespoon butter. Preheat oven to 425° & bake for 25 to 30 mins. ___________________________________________________ L IGHT CORNBREAD Janie Binkley ___________________________________________________ 2 c. cornmeal ½ c. flour 3/4 c. sugar 1 tsp. soda 1 tsp. salt 1 package dry yeast 2 c. buttermilk 3 T. oil DIRECTIONS: Mix cornmeal, flour, sugar, soda, salt. Add yeast & buttermilk & mix lightly & pour into a loaf pan. Bake at 350° for approximately 15 mins. *Serve with barbecue, baked beans, & coleslaw. ________________________________________________++_ D ADDY’S CORNBREAD (IN HONOR OF JIMMY REECE) Kimberly Reece-Roth ___________________________________________________ 2 c. white SR meal 2 T. flour, self-rising 3 eggs, beaten 2 ½ cups milk ½ c. oil, vegetable 1 diced white onion diced jalapeño peppers to taste 1-15 ounce can of creamed corn 1 ½ c shredded blended cheese DIRECTIONS: Pour oil into a glass 9 x 13 dish & place in oven - turn to 400° & begin to preheat. Combine all ingredients until well combined. Once oven temp is reached, & all ingredients have been mixed, pour into greased glass 9 x 13 & bake 40 to 45 mins until golden brown. The edges will be crispy!
