___________________________________________________ B ANANA CRUNCH Frances Anne Boyd ___________________________________________________ 8 oz Cool Whip 8 oz sour cream 1c pecan pieces 1/2 c sugar 2 c milk 1 egg 4 bananas 1 small instant vanilla pudding mix DIRECTIONS: Mix pecans, sugar, & egg. Spread on parchment lined baking sheet & bake at 350° for 15 mins. Set aside to cool. Mix pudding mix & milk --- let set until firm. Add sour cream to pudding then fold in Cool Whip. Crumble 1/2 pecan mixture on bottom of 9 x 13 dish, add sliced bananas, then pudding mixture, top with remaining pecans. Refrigerate. ___________________________________________________ B ANANA CRUNCH Joan Dowlen ___________________________________________________ 1 egg 1/2 cup sugar 1-1/2 c chopped pecans 3-4 bananas 3.4 oz box French instant vanilla pudding 1 cup milk 8 oz sour cream 8 oz Cool Whip DIRECTIONS: Preheat oven to 350°. Scramble egg, add sugar & pecans. Mix together & spread on sprayed aluminum foil on cookie sheet. Bake for 15 mins. Let cool. Mix together pudding, milk, sour cream, & Cool Whip. Using a 9 x 13 Pyrex dish, spray with Pam. Crumble pecans. Place sliced bananas on top, pour pudding mixture on that. Chill & serve. ___________________________________________________ B ANANA PUDDING R.D. & Nina Huffines ___________________________________________________ 4 bananas, sliced 1-1/2 pkgs vanilla wafers 4 egg yolks 1 tsp vanilla flavoring 3/4 cup sugar 1/4 tsp salt 1/4 cup all purpose flour 1 cup whole milk 1-1/2 cups evaporated milk Meringue: -------------------------------------------------------------------------- 4 egg whites 1/2 cup sugar 1 tsp vanilla flavoring DIRECTIONS: Preheat oven to 350°. In a 2 quart casserole layer vanilla wafers & bananas. In a sauce pan, whisk together sugar, salt, flour, & egg yolks plus regular & evaporated milk. Cook on medium heat, stirring constantly with whisk for about 7 to 8 mins until thickened. Removed from stove & stir in vanilla flavoring. Pour over wafers and bananas. Beat egg whites until stiff peaks form. Add sugar & vanilla. Beat into egg whites, spread over pudding and bake until browned at 350°.
