___________________________________________________ B UTTERMILK CHESS PIE Betty Davidson ___________________________________________________ 1/2 c flour 1 tsp salt 1 c margarine (melted) 1 tsp vanilla 3-3/4 cup sugar 6 eggs 1c buttermilk DIRECTIONS: Combined sugar & flour, sift well. Add melted margarine & eggs. Mix lightly with fork then add buttermilk & vanilla and stir well until blended. Pour into unbaked pie shell & bake for 40 to 50 mins at 350° until firm & golden brown. ___________________________________________________ B UTTERMILK PIE Vickie Tidwell ___________________________________________________ 1-1/4 c sugar 3 eggs beaten 1 T self rising flour 2/3 stick margarine melted 1/3 cup buttermilk 1 unbaked pie crust DIRECTIONS: Preheat oven to 340°. Cream sugar and margarine together. Blend in eggs. Add remaining ingredients and blend till smooth. Pour into pie crust. Bake for 45 mins. Cool before serving. ___________________________________________________ B UTTERMILK POUND CAKE Rosemary Hunter Klein ___________________________________________________ 3 cups sugar 2 stick melted butter 4 eggs 1/4 tsp baking soda 3 c sifted all purpose or bread, flour 1 c buttermilk 1 tsp vanilla flavoring DIRECTIONS: Mixed sugar, butter & eggs in mixer. Add baking soda & sifted flour. Continue mixing. Add buttermilk & vanilla flavoring---mix thoroughly. Bake in a well greased Bundt pan at 350° approximately one hour or until an inserted toothpick comes out clean. Let cool in pan approximately 10 mins. Remove from pan and continue cooling on a wire rack. ____________________________________________________ C ARAMEL ICING FOR JAM CAKE Mary Grey Jenkins ____________________________________________________ 1 c butter 2 c brown sugar 1 c Pet milk 2-3 boxes, powdered sugar DIRECTIONS: Melt butter in heavy pan. Add brown sugar & milk. Boil hard for 2 to 3 mins. while stirring constantly. Allow to cool a little. Then add powdered sugar. Stir constantly until desired thickness. May not need three boxes of sugar. Note: Makes a lot of icing. NOTE: JAM CAKE ON PAGE 90.
