Cajun Chicken Pasta Salad

Directions:

In large bowl, mix together pasta, chicken strips, and onion with 1 cup of Italian dressing, adding more dressing if needed to moisten all elements.

Mix flour, salt, and pepper in a bowl (or place in a large zip lock bag)

Cover and let sit in refrigerator for 45 minutes.

(This recipe can be modified for quantity and spice level)

Cut the chicken in half so that each piece is no thicker than 1/2 inch thick. (You can pound the chicken down to 1/2 inch thick, then cut in half)

Uncover and add shredded cheese to taste.

Can add additional seasoning, dressings, and cheese to taste. Apple Cherry Cake

Heat oil and butter in extra large skillet (cast iron works great) over medium-high heat.

• 1 - 12 oz package tri color pasta

• 1 package of chicken strips

Dredge each piece of chicken, shaking off excess, and carefully place in the hot skillet, searing each side until golden brown (approximately 3 minutes on each side, focus is on getting nice golden crust, not thoroughly cooking chicken at this point) Set aside on plate.

• Cajun seasoning (I prefer Louisiana brand Cajun Seasoning but your preference)

• 1/2 sweet onion

Using a small pan double the recipe for a larger pan

• 8 oz mozzarella cheese (can use different cheese of your preference)

• 2 small apples or one large diced

CULINARY CONNECTION Chicken Marsala Submitted by: Tricia Jones Ingredients: • 1/4 cup flour (or sub Gluten Free flour) • 1 teaspoon salt • 1/2 teaspoon pepper • 1-3/4 pounds chicken breasts, boneless & skinless • 2 tablespoons olive oil • 1 tablespoon butter, more as needed • 1 lb mushrooms – cremini, portobello, shiitake, burron – sliced • 1 large shallot, finely diced (or sub ½ red onion) Lower heat to medium and add one more tablespoon of olive oil and butter to the pan. Add mushrooms and saute 5-6 minutes. Add shallots, garlic, oregano, thyme, and season with a five-finger pinch of salt and pepper. Keep sauteing until the mushrooms release their liquid and begin to brown slightly. Add chicken broth, Marsala wine (sweet or dry to taste preference), and a heavy cream, scraping up any browned bit. Simmer gently uncovered for 12-15 minutes over medium or medium-low heat, letting it thicken and reduce, and deepen in color. (It won’t be thick but enough to coat the back of a spoon) Add more salt and pepper to taste. For extra richness, add more cream, for looser sauce, add more broth. Nestle in the chicken to the Marsala sauce and simmer another 5 minutes or until chicken is cooked through. • 1 large bottle Italian dressing • 1 cup ranch dressing Directions: Marinate chicken in 1 cup Italian dressing or to cover for at least 30 minutes. After chicken has marinated, season both sides of strips with cajun seasoning of your choice and bake at 400 degrees for 35-45 minutes or until done, turning once while cooking. (Can use air fryer) Prepare pasta per package directions: however, only cook pasta until somewhat soft but firm not crunchy. Chop onion and shred mozzarella • 3 Eggs Mix • 3 eggs • 1/2 cup sugar

• Chopped frozen cherries

• 1/2 cup Coconut or Monk Fruit Sugar

• 150ml of Almond Milk or Almond Milk/Coconut Milk Creamer (I mix both to equal 150ml) • 1 cup of Almond or Coconut Almond Flour can mix as well

• 1 Tablespoon baking powder

Preheat oven to 400

Grease pan with butter or oil and a little bit of flour – lay apples and cherries

Add into mix in

Can be served over polenta, mashed potatoes, mashed cauliflower, roasted spaghetti squash, or pasta of your choice.

• 3 cloves garlic, minced

• 150ml Milk

• 1 tablespoon chopped fresh oregano or thyme (can use both)

• 1 cup flour

Vegetarian Option: replace Chicken with tofu and chicken broth with veggie broth.

Add into mix in

• 1 cup chicken broth

• 1 Tablespoon baking powder

• 3/4 cup dry Marsala wine

Pour mixture above over apples – cook for 30 minutes – Let cool

• 1/2 cup heavy cream (or half and half)

• Can use parsley for garnish

Top with Whipping Cream if desired – great with hot tea in the am or a birthday cake! Whatever you desire. Enjoy!.
