Healthy Recipe: Creamy Chicken &Wild Rice Soup Healthy Living Starts With Healthy Eating

Directions In a 12-inch skillet heat oil over medium-high. Add chicken; cook 6 minutes or until browned, turning once. In a 6-qt. slow cooker combine chicken,mushrooms,chickenbroth,water, leeks, celery, wild rice and salt. Cover and cook on low 6 hours or high 3 hours. Remove chicken from cooker. Coarsely shred chicken using two forks. If using low setting, turn to high. In a blender combine the tofu, low-fat milk, flour and thyme leaves. Cover and blend until smooth. Stir into mixture in cooker. Cover and cook 30 minutes more or until thick. Stir in shredded chicken.

Often when we think about getting healthier, we think about what we must take away or deprive ourselves of, or that we need to do something big and bold to make a difference. But studies have shown that over the long term, it’s hard to keep motivated with large changes. At VCSST, we are committed to helping you to feel, move, play, and live better. We want you to make positive changes in your life and not allow discomfort or dysfunction to rob you of this. In 2019, we challenge you to add one simple thing to your life each month. We’re calling it “12 steps to a healthier you!” It doesn’t have to be anything earth shattering, and nothing that will derail you by its complexity. Fill a water bottle every morning. Keep it next to you on your desk. Carry it around with you as you walk around. You will be surprised at how often you will drink water if it is always available to you. Proper hydration is essential for nearly every bodily function including proper circulation, temperature regulation, and it helps with joint and brain health. Staying hydrated has been associated with improved mood, increasedweight loss, improvedperformance on cognitive tasks, reduced headaches, and it can help prevent certain conditions such as kidney stones, constipation, and urinary tract infections. The average healthy adult actually only needs 30-50 ounces of water per day (not the 8-12 glasses that has been popularized). Some exceptions to this rule are when exercising, especially during hotter months like the summer, and for elderly individuals.
