As the summer draws to a close and daily life slowly returns to normal, it’s the time of year when we look forward to cosy jumpers, crisp autumn walks and an abundance of the finest seasonal produce. With the days turning a little cooler, we’ve a wealth of ideas inside for combating the autumn chills – including all you need to know about the perfect cuppa, how to make a decadent hot chocolate and a delicious, comfor ting gnocchi recipe. BEST OF THE SEASON We’ve been catching up with our Fruit Buyer David, ahead of the autumn harvest to find out more about our UK apples and pears appearing in store from mid-September. As with all of our buyers, planning ahead is key to delivering you the best variety and quality produce we possibly can. David star ts looking at buying the fruit for autumn in the warmer summer months. This includes many meetings with representatives from our grower base, where he discusses prospects for the season so that he can plan well in advance. “There’s something quintessentially British about new season top fruit at this time of year, takes me back to my childhood, eating Cox’s apples bought from our local greengrocer at the time.” - David Autumn is a fantastic season for fruit, from jams and chutneys, to pies and crumbles. David says you can’t beat a good Bramley apple crumble, complete with a generous dollop of cream or custard, and we agree! Before opening the first Booths store, The China House, Blackpool in 1847, Edwin Henr y Booth trained as a tea trader and travelled far and wide often in search of excellent tea and coffee. These days we’re just as choosy.We choose 100% Arabica beans from coffee estates around the globe and we are proud to be par t of the Ethical Tea Par tnership.Whilst in search of the perfect beverage Edwin developed the finely honed skill of exper t tea tasting. This skill has been passed down from generation to generation to ensure all Booths teas are blended to match your highest expectations.We have always blended our tea and roasted our coffee in small batches, in-house and current production takes place at HQ in Preston. If you’re driving by of a morning you can often smell the coffee roasting!

THE BEST BREW OF THE BATCH We are ver y lucky to have a colleague who is an exper t in tea and coffee. Peter our Beverage Specialist (pictured above), oversees the production of all Booths brand tea and coffee. For the ultimate quality test, he tastes a sample from ever y batch to make sure you get the same great brew ever y time. For the best brew at home, loose leaf tea and ground coffee should be kept in separate cool, dark, dr y containers that are air tight. Once our foil sealed for freshness bags are opened the contents should be used within two weeks. We’re excited to announce the launch of our new Special Edition Prince’s Trust Royal Assam Tea to celebrate 10 years of The Prince’s Countr yside Fund. A large leaf blend of teas from the Assam region of Nor th East India, it is full bodied with a rich malty character. 10% of the purchase price is contributed to The Prince’s Countr yside Fund, a registered charity working to suppor t and sustain the future of British farming and rural communities.

We’ve been catching up with Peter our Beverage Specialist and Andy our Hot Beverage Buyer on what they recommend for the best breakfast brew, the much needed afternoon pick me up and something that’s perfect for winding down in an evening.

BREAKFAST

The morning cuppa is par t of the daily routine for many and a great brew can set you up for a great day, so whether you’re a tea or coffee lover we have something perfect for you – after all we have been exper tly blending fine tea and coffee since 1847. This Mandehling Sumatra bag of roasted coffee beans have a dark and deep flavour with complex mid notes and an ear thy centre, developing into a sweeter molasses finish, a strong and warming way to star t the day. Don't forget you can use our free coffee bean grinder in store, so your coffee is ready to use when you get home. The English Breakfast Loose Leaf Tea is a traditional blend of teas to give a full bodied, bright, strong flavour for an uplifting star t to the day. Served traditionally with milk but equally impeccable without.

AFTERNOON

The Monsoon Malabar Roast is a great option for an afternoon escape. First breathe in the aroma from your cup before slurping the coffee to release the full range of flavour. The beans have been exposed to the monsoon winds of Southern India, giving a rich, full bodied velvety smooth coffee. Available in a ground option for your convenience. Afternoon Loose Leaf Tea is a balanced blend of Indian, Ceylon and China black teas, blended to produce a light, fragrant and refreshing drink. Brewing time is a matter of taste, but we recommend 3-4 minutes for black tea.

EVENING

And relax…the day is almost done, so flick the kettle on and put your feet up. The Swiss Water Decaffeinated bag of roasted coffee beans is chemical-free, decaffeinated Guatemalan Arabica with a citrusy burst, mellow flavour and a sweet nutty finish. Enjoy this decaffeinated brew of an evening - you deserve it! Gunpowder Green Loose Leaf Tea is a green tea from China, its distinctive appearance is thought to resemble the look of gunpowder. The light, fruity tea with delicate character lends itself well to the evening time when winding down after a long day. Brew green tea for around 2-3 minutes and serve without milk.

A campfire treat LOADED HOT CHOCOLATE

Serves: 2 ︱ Prep time: 5 minutes ︱ Cooks: 3 minutes

INGREDIENTS 2 tbsp Green & Blacks Hot Chocolate Powder 2 tbsp Nutella 600ml milk TO DECORATE Whipped cream to taste Handful of popcorn 20g hazelnuts, toasted and crushed Handful of marshmallows

METHOD 1 Gently heat the milk until it comes to a boil. 2 Add in the hot chocolate powder and stir well. Then swirl in the Nutella until you get a thick, velvety consistency. 3 Decorate your mug by adding a little extra Nutella to the rim and applying some toasted crushed hazelnuts. 4 Carefully pour the hot chocolate into your mug and top with a generous amount of whipped cream. 5 Finish with popcorn, marshmallows and more crushed toasted hazelnuts.

CHEF’S TIP For a creamy coconut flavour, swap out the milk for coconut milk!

The perfect loaf QUICK 'SOURDOUGH STYLE' LOAF

Makes: 1 ︱ Prep time: 24 hours ︱ Cooks: 30 minutes

INGREDIENTS LOAF STARTER 100g water 100g plain flour 1 tsp dried yeast FOR THE DOUGH

METHOD 1 Mix all the loaf star ter ingredients together and leave for 24 hours in the fridge. 2 For the dough, add the water to a mixer bowl followed by the loaf star ter, then add the flour, salt, sugar and yeast. 3 Mix on the lowest speed for 3 minutes then place your dough in a dusted round loaf basket to prove. Cover with cling film and rest for 3 hours. 4 Pre-heat the oven to 230°C and place a baking tray in the middle of the oven to get hot and a small bowl in the bottom of the oven. 5 Turn the dough out onto parchment and carefully score the top of the dough with a sharp knife. 6 Carefully place the dough onto the hot oven tray. 7 Add a ladle of water to the bowl in the bottom of the oven and close the door (this will produce steam to help give the bread the perfect crust). 8 Bake for 5 minutes with the steam, then carefully open the oven door to vent and allow steam to escape. Then close the door and bake for a fur ther 25 minutes, rotate as necessar y to ensure even colouring.

9 Remove from the oven and allow to cool before slicing. CHEF’S TIP Tr y exchanging 50g strong bread flour for 50g r ye flour to give a nice subtle change in flavour.

Shipton Mill Flour

Melisa Biscuits, Home Baking & Preserves Buyer

Shipton Mill was founded in 1979 by an adventurous John Lister along with four friends who found an old mill deep in a Cotswold Valley. They set about rebuilding it themselves, using reclaimed machiner y and mill stones, which are still in use to this day.

Since the ver y star t organic has been at the hear t of the Mill. It’s driven by a desire to not only protect the ear th and our environment, but to give back to the ear th and make it a more fer tile place for generations to come. Working closely with a number of UK organic farmers, Shipton Mill are currently examining how they can improve the quality of UK organic wheat for baking and the flours milled from it. These local farms share the belief of producing food in the most sustainable way possible. Their challenge is to provide bakers with high quality, UK grown wheat that will still produce great results, despite the unpredictable climate and without the use of processing aids. Shipton Mill are always finessing and evolving their production techniques, combining craftsmanship and ancient traditions with new slants, milling flours that today’s bakers and innovators enjoy working with and can transform into beautiful products. Finding exciting suppliers who treat the ear th in a regenerative manner is critical, and the final flavours and end products are a result of this. “I was instantly drawn to their care and ethos from the star t. They are innovative in their production techniques and constantly look for ways to develop new organic products based on the crops they grow. I would encourage anyone to give their flour a tr y as the proof really is in the bake” - Melisa.

Autumn warmer

GOATS’ CHEESE, SAGE & CHORIZO GNOCCHI Serves: 4 ︱ Prep Time: 20 minutes ︱ Cooks: 45 minutes

INGREDIENTS 1 butternut squash, roasted whole ½ a spicy chorizo ring, diced 2 garlic cloves, finely diced Bunch of fresh sage leaves, finely chopped

70g soft goats’ cheese 1 pack of fresh gnocchi TO SERVE Grated Parmesan to taste

METHOD 1  Remove the seeds of the roasted squash and discard. Scoop out the filling and roughly mash with a fork in a bowl. 2  Fr y the chorizo on a medium to high heat for a few minutes in a large pan until it releases the oils, no need to add extra oil. 3 Add the garlic and sage to the chorizo and stir for a minute so it doesn't burn. 4  Add in the squash and stir in for a minute. 5  Turn the heat down and add the goats’ cheese and leave it to melt a little while you prep the gnocchi. Stir occasionally to make sure it does not stick to the pan, turn the heat off if you need to. 6  Boil your gnocchi in lightly salted water. Add a splash of the gnocchi water to the butternut squash mixture if it needs loosening. 7 Drain the gnocchi and fr y in a drizzle of olive oil in a fr ying pan until golden and crisp. 8  Mix the gnocchi with the butternut squash mixture. 9  Finish with a generous grating of Parmesan.
