There’s a Right Way to Cook a Steak

And It’s Not Well-Done

It’s always interesting learning about different preferences, but when it comes to meat, the various likings take on a unique tone. For the most part, it’s not quite as divisive as religion or politics — most people keep a pretty level head if someone likes a steak done differently than them. But there are certain times when a deep-rooted emotional reaction comes out that can’t quite be explained. My personal belief is the bloodier, the better. Give me a mooing cut of KC strip, and I’m in heaven. I’ll prepare it with a little bit of olive oil, salt, and pepper. No marinades; just something simple and to-the-point. This lets the beef do the talking. My wife is more in the medium camp unless she’s pregnant. During both of the pregnancies, steaks, burgers, and pretty much red meat in general were all off the table because she had to have the meat cooked well-done. It defeated the purpose for both of us. If she’s deprived, then I’m deprived. So the whole time she was pregnant, steak was not on the menu. prepare the “perfect” steak. Alternatively, what are your favorite KC steak joints? I distinctly remember a moment that helped me realize that everyone has a different opinion on the right way to eat a steak. When Al and I were still living in Salina, we would frequent a local restaurant called Tuscon’s. At the time, it was one of the few locally owned establishments where you could go to grab a steak. One day, a woman from out of town came barreling into the joint. She was boisterous and had one of those distinct personalities that draw attention. The fact that it was a small restaurant only amplified her gregariousness and left a lot of patrons with no choice but to focus on her. When she sat down, she told the waiter, “I heard the Midwest has the best steaks. I’m here

to have the best steak in the world.” So the waiter began explaining to her the different cuts and what her best option was. She made a decision, and the waiter politely asked how she wanted it cooked. “Well- done,” she said. Part of me died inside at that moment. The Best Ways to Cool Your Mouth After Eating Something Spicy

When you pop something spicy into your mouth, it’s always good to have a cool beverage nearby. You never know when you’re going to need to put out a fire. But when your mouth feels like it’s going up in flames, some methods of cooling are better than others. Let’s get this out of the way first: Water and soda are two of the worst ways to cool off your mouth after eating something spicy. Water, soda, and even fruit juice will simply spread the heat around, meaning that fiery sensation will only last longer. To combat the heat, it’s important to understand where that sensation comes from. Many spicy sauces and dishes get their heat from capsaicinoids, or specifically, capsaicin, an oily compound that loves to stick to your tongue. It’s

important to note that capsaicin is not water-soluble.

And for those who are lactose intolerant or vegan, soy milk and peanut butter can help too. The higher the fat content, the better!

Chili peppers are a primary source of capsaicin. Other foods, such as mustard, radish, horseradish, and wasabi, get their heat from a compound called allyl isothiocyanate. This compound does not usually stick around as long as capsaicin.

GRILLED LEG OF LAMB

Ingredients

• 1 4–5-pound boneless leg of lamb, not butterflied • 1/4 cup extra-virgin olive oil

• 8 cloves garlic, smashed and coarsely chopped • 2 tablespoons fresh rosemary, minced • Salt and pepper, to taste

Directions

1. On a large cutting board, cut between the muscles on the leg of lamb to divide into 4 pieces, pulling apart with your fingers if need be. 2. In a mixing bowl, combine olive oil, garlic, and rosemary. Add lamb and toss to coat. Marinate for 4 hours at room temperature. 3. Heat grill to medium-high. Season lamb with salt and pepper and grill until lamb reaches an internal temperature of 130 F (medium rare). Cook time will vary depending on size of lamb pieces. 4. Let lamb rest, covered with tin foil, for 15 minutes. Slice thinly and serve.

The Strangest Holidays in August

August’s Silliest Holidays Are These on Your Calendar?

August 13: Left-Handers Day

February has Valentine’s Day; September has Labor Day; December, of course, has Christmas; and August has, um, National Raspberry Cream Pie Day. August may not host any major holidays, but it doesn’t lack for some of the goofiest on the calendar.

About 10 percent of the population is left- handed. Lefties may be stuck in a right- hand-dominant world, but on August 13, they rule the roost. Originally founded in England, Left-Handers Day has taken off in the U.S. Righties are encouraged to try out a left-handed approach for the day. Lefties, for their part, are free to be themselves. Thrift shops are a staple of American commerce, so it makes sense that there is a day devoted to them. Take the day to hunt for lost treasures and screaming deals. Many thrift shops also benefit nonprofit organizations, giving you even more reason to frequent them. August 17: National Thrift Shop Day

August 6: National Wiggle Your Toes Day

August 27: National ‘Just Because’ Day

While the origin of this holiday is uncertain, it’s held every year on August 6. To celebrate, people are encouraged to wear sandals, flip flops, or other toe-exposing footwear. You can also frolic barefoot in the grass or simply stretch those digits throughout the day. Just don’t expect to see any Hallmark cards devoted to National Wiggle Your Toes Day anytime soon.

This celebration is really scratching the bottom of the holiday barrel. Joseph J. Goodwin created National “Just Because” Day in the 1950s. It’s a day to do something “just because.” Be spontaneous and have a little fun. There’s no one way to celebrate, which is fitting, given that the existence of the holiday seems to defy logic altogether.
