CHERISHING CHRISTMAS TRADITIONS

The most wonderful time of the year has arrived! It’s the perfect season to gather with family and friends and celebrate the holidays together. Every Christmas, I enjoy reflecting on the past year and reminiscing about past Christmases filled with joy and nostalgia. It’s a time to cherish both old and new memories! One of my favorite Christmas memories is from my high school and early college years when we’d head to Lake Tahoe and spend either the week before or after Christmas there. It was such a magical way to embrace the season. We’d rent a cozy cabin and create unforgettable moments, skiing and enjoying time as a family. Planning our ski trips and visiting different slopes was always a thrill, and waking up to fresh snow made it even more special — in fact, there’s nothing better! One year, during our stay at the Christmas cabin, a wild storm swept in, and we woke up to about 6 or 7 feet of snow overnight! The night before, there hadn’t even been an inch of snow on the ground — just a bit up in the mountains. My brother barely made it in that morning after

brought him back to the cabin to keep him warm. We didn’t know his name or where his owners were, so we temporarily named him Snow Pup. He stayed with us for two nights, and once the storm passed, we reunited him with his owners — though we secretly wished no one would claim him because he was such a wonderful dog! “We didn’t know his name or where his owners were, so we temporarily named him Snow Pup.” Another fun tradition during our cabin stays was heading down to the local Christmas tree farm. Each year, our family made it a mission to find a "Charlie Brown" Christmas tree — the homeliest tree on the lot! We’d bring it back to the cabin, and the kids would create homemade ornaments to decorate it. We’d string popcorn and cranberries and hang the handmade decorations. We turned that little tree into something special every time.

We always had an incredible time at the cabin, enjoying the snow and celebrating Christmas together. We did it for so many years, and each of us took turns preparing different meals. It was all about relaxing, celebrating, and soaking in the season's magic. I looked forward to it every year, and now, I truly miss those times. But I’m grateful to have created new traditions with my own family that bring just as much joy.

Greek Chicken and Rice

INGREDIENTS

• 2 tbsp olive oil • 1 onion, diced • 2 cloves garlic, minced • 2 lbs boneless, skinless chicken breasts, cubed

• 2 cups chicken broth • 1 (14-oz) can diced tomatoes • 1 cup uncooked long-grain white rice • Juice of 1 lemon • 1/2 cup feta cheese • Salt and pepper, to taste

• 1 tsp dried oregano • 1 tsp dried thyme

DIRECTIONS

1. In a large skillet over medium heat, heat olive oil and sauté onion and garlic until softened. 2. Add chicken, oregano, and thyme and cook until the chicken is no longer pink, about 3–4 minutes. 3. Pour in chicken broth, diced tomatoes, and rice. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes or until the rice is cooked through. 4. Stir in the lemon juice and feta cheese, then season with salt and pepper.
