Christmas blinis with smoked salmon

Blinis are Eastern Europe pancakes. They are of medium thickness and size and are often associated with religious festivals. This version is easy to make and the colours are Christmassy. Ingredients (For 8 to 10 people with two blinis per serving) • 1 cup all-purpose flour (Traditional blinis contain buckwheat flour. If you prefer, use 1/2 cup buckwheat and 1/2 cup all-purpose flour.) • 1 tsp salt • 1/2 tsp baking powder • 1 cup milk • 1 large or extra-large egg

• 1/4 cup clarified butter • 225 g thinly sliced smoked salmon • 1/2 cup sour cream or crème fraiche (optional) • A few VERY finely chopped chives and radishes (to create a festive-coloured garnish) Preparation 1. In large bowl, combine flour, salt, and baking powder. In another bowl, lightly whisk milk, egg, and one tbsp clarified butter. Combine the two mixtures. 2. Heat a little clarified butter in frying pan over medium heat. Carefully spoon about a tbsp of mixture at a time into frying pan to form small, round pancakes. Cook for about two minutes or until

bubbles form on tops of pancakes, then flip and cook for about a minute more. 3. Continue until all the mixture has been used. You should get about 20 small pancakes. 4. To serve, place a piece of salmon on each pancake (roll it a bit so it isn’t flat), and then put a small dollop of sour cream on each. Sprinkle with finely chopped chive and radish to garnish.
