Let it be said, this is not your garden-variety farm-to-table rendition. The trio’s unerring focus is bringing the Sussex Countryside to West London. Dishes are created using local, seasonal produce with the philosophy that what grows together, goes together. The Local and Wild Tasting Menu highlights wild foraged and locally grown farm vegetables, served alongside sustainable livestock from the family farm. Sweets like rhubarb mille feuille, thyme pastry cream and praline sherbert are as innovative and complex as the main dishes. Wine is from the family run Nutbourne vineyard, even Mom Galdwin got in on the action and designed the labels. It will be very interesting to see what the team will tackle next. theshed-restaurant.com
