Marie Studio is recognized for creating immersive spaces — worlds — that evoke emotion and keep people returning for more. In Conversation With Caffe La Tana OLD-WORLD ITALIAN EATERY Meet Emily Goodrich, Director at Banda Volpi Tell us about La Tana’s design story. La Tana used to be a convenience store, so it was quite the transformation. Paul and Craig had always dreamed of opening an alimentari, similar to the ones you find in every neighbourhood in Italy. Somewhere locals could pop into in the morning on their way to work for an espresso, somewhere they could stop by on their way home for fresh pasta and all the ingredients to make dinner, a local spot that was warm and cozy, perfect for a weeknight meal, as well as celebrating a special occasion. On every shelf you will find authentic, hard-to-find Italian ingredients, and in every corner, you will discover a playful design element, whether it’s a carefully chosen piece of art, a vintage map of Italy, or custom wallpaper featuring woodland animals peeking out, including our signature fox.
La Tana is attached to Pepino’s, which is our Italian-American concept, and the complete opposite in concept. Having the two restaurants connected, old world and new world, makes it truly unique and the energy undeniable. What makes your pasta special? Our pasta program is special because the fresh pasta is made daily in the caffè, in view of guest dining and shopping. Our skilled pastaio are always making different types of pasta, and are happy to answer questions on how to cook at home, or what tools are best for trying pasta making at home. Our staff are incredible! It’s a rainy Vancouver evening… what’s the best to-go dinner in your caffe? Right now, I think the Steelhead is one of the best dishes in the company. It’s light, fresh, and the porcini butter is stuff dreams are made of. And you can never go wrong with the pasta feature, which changes every few days.
HOW TO COOK LA TANA’S FRESH & FROZEN PASTA 1. First, bring a large pot of salted water to a boil over medium to high heat. Be sure to add a generous amount of salt as this will help to season the pasta and add flavour. 2. Once the water has reached a rolling boil, gently drop the fresh pasta into the pot. Gently stir the pasta right away to ensure it doesn’t stick together. 3. Your cooking time will depend on the thickness of your pasta but in general it will take between 2 and 4 minutes to cook all the way through. 4. When the pasta is done, remove it from the boiling water and serve with your favourite sauce. 5. Buon appetito!
