Jamie Kubach, a lacrosse goalie.
Last summer, she was out

with friends and hopped on the handlebars of her friend's bike for a ride. When her
ride was over, and she tried to hop off, her foot got caught in the wheel. To free herself from the moving bike,
CHERRY CHIA GREEK YOGURT BOWLS
Jamie pulled her foot from the wheel, which caused the spokes to nearly tear her pinky toe from her foot. When she got to the hospital, doctors informed her that they would need to amputate her pinky toe. Two months later, after beginning school again, Jamie started physical therapy with us at Myokinetix after a friend who tore her ACL recommended us. "They made the recovery process easier and more helpful," she said. When Jamie first came in, she couldn't walk and had to use a hot pink knee scooter. So, we met her where she was and helped her perform small exercises to regain strength in her foot and leg. "It wasn't about just my foot. It was about my calves, my quads, and even my core." Jamie could start walking again a few months later, and we adapted her care to help her transition. It wasn't easy, and Jamie faced challenges along the way, especially with the mental aspect of losing her toe, "I had some days where I'd wonder, am I really going to be back to 100%? I had days where I doubted whether I would be fully prepared," she told us. But Jamie is incredibly strong and had her team at Myokinetix to support her, "It was actually fun to come to PT, and coming here was honestly the joy of a lot of my days." She also attributes her mental fortitude to Kobe Bryant, "I try to have a Kobe mentality. He has a quote, ‘Don't quit in the middle; you quit at the end,’ and I'm not done yet, so I can't quit. The end is when I graduate, and I'm done with college lacrosse, so I'm still in the middle. I have to keep going." And we know she will!

Chia Seed Jam • INGREDIENTS:
Greek Yogurt Bowl •
2 cups Chelan fresh sweet cherries, pitted
1 cup nonfat plain Greek yogurt 1/2 tsp vanilla extract

3 tbsp chia seeds
• • •
2 tbsp honey 1/4 cup water
1 tsp hemp seeds
1 tbsp granola
DIRECTIONS:
Chia Seed Jam We suggest making the chia seed jam in advance and storing it in the refrigerator so you can quickly assemble these yogurt bowls all week. Using a potato masher, mash down the cherries. Place a small pot on high heat and add the cherries, chia seeds, honey, and water. Bring the mixture to a boil, then turn down the heat and let simmer for 10 minutes, stirring constantly. Allow jam to cool before using or refrigerate. Greek Yogurt Bowls In a small serving bowl, mix the Greek yogurt with vanilla extract. Top the Greek yogurt with 2 tbsp cherry chia seed jam, hemp seeds, granola, and a few additional Chelan fresh sweet cherries, if desired.
