25 YEARS OF COOKING UP FLAVOR AND FUN THE GRILL MASTER
All good things come to an end. This is how I feel when I finally finish cooking a steak. In our household, grilling is a cherished activity that my wife and I have always enjoyed. We have an outside gas grill that’s been a reliable companion for over 25 years, piped directly from the house. Our stainless-steel Thermal Engineering Corporation (TEC) infrared grill has seen us through many seasons, even during the colder months. I feel a gas grill is the best choice because it controls the exact temperature. With a high-tech infrared temperature reader, I can accurately measure the grill’s heat and ensure that each type of meat is cooked perfectly. technology. When cooking, it is essential to limit the charring of meat as it can be a concern due to its potential carcinogenic effects. Keeping the grill temperature at a reasonable level helps prevent excessive charring. Experimenting with different grilling techniques can be fun and exciting; although I sometimes burn things, I have learned and improved. Mastering the grill is a journey that gets better with time. Grilling also has health benefits: It reduces fat content since it drips off while cooking and you don’t have to add oils and butter. Also, grilled vegetables better retain their nutrients and flavor. When cooking hamburgers, medium heat helps keep the char down, and avoid external sugary glazes and sauces to prevent excessive meat burning. However, you can put them on at the very end of the cooking process or marinate thoroughly before cooking. To be safe, it is crucial to avoid bacteria contamination. Once I’m done cooking the meat, I make sure the plates and silverware I used to handle the raw meat are not used again. Burning off any bacteria on the grill is another good practice, and you should never leave meat out for extended periods. Cooking is an enjoyable experience for my wife and me, blending relaxation and creativity. Not only do we love to indulge in our creations, but we also
get a kick out of being outdoors. There is no better ambiance than listening to music while sipping a glass of wine as we bask in the beautiful evening. A bittersweet feeling comes along when nightfall closes in — I enjoy the cooking process so much, sometimes even more than the finished meal. Once the cooking is over, it is time to dig in, as good food always results in a good

Have you ever feasted on chicken wings, your hands stained with barbecue sauce, and thought, Why don’t we just eat everything like this? As it turns out, we did — people only started eating their meals with cutlery fairly recently. Many cultures around the world still eat primarily with their hands. So, why are placemats adorned with forks, spoons, and knives commonplace today? To find out, we have to get our hands dirty — because the history of cutlery, much like the history of civilization, is complex, nuanced, and full of gossip. BIG SPOON LITTLE SPOON Perhaps unsurprisingly, spoons are the oldest examples of cutlery people used consistently for millennia. After all, what good is a fine pot of communal soup without a spoon to eat it with? Likewise, knives have always been used to cut up meat and prepare our meals, but only the advent of individualized meals rather than buffet-style brought along the advent of dinner knives. Forks, however, are an altogether newer invention. Although large serving forks can be traced as far back as Ancient Egypt, the individual, smaller version has its roots in the Byzantine Empire. Around one thousand years ago, the Byzantine
noblewoman Theodora Doukaina brought a golden fork to her wedding feast in Venice. It became quite controversial among the Italians, with many shunning the novel tool as posh and overly decadent. However, as royals began to intermarry, the fork gradually caught on. Royals increasingly ate with cutlery and became weary of dirtying their hands with their food. By the 1800s, cutlery was widespread in the Western world, and today, most people and establishments serve meals with silverware! ANTIQUITY — MAKING A COMEBACK There’s a reason movie theater popcorn doesn’t come with a popcorn spoon and your favorite burger joint doesn’t offer sporks; some food is meant to be eaten with your hands. While most sit-down meals will always be the domain of the cutlery-wielding elite, finger food isn’t going anywhere anytime soon, and if history has any say, it never will.
