1 cup diced mushrooms

1 red bell pepper, diced 1 yellow bell pepper, diced

1 tsp dried oregano

Salt and pepper, to taste 2 cups cooked quinoa

1 cup diced zucchini

IF YOU GRILL IT THEY WILL COME

DIRECTIONS

1. Heat olive oil in a large skillet over medium heat. 2. Add bell peppers, zucchini, and mushrooms and cook until softened, about 5 minutes. 3. Add oregano, salt, and pepper and stir to combine. 4. Add the cooked quinoa and mix thoroughly. 5. Cook for an additional 5 minutes, then serve.
