Scott Ewing Division Director of Patient Dining

Randi McMillan Nutrition Informatics Project Manager

In his role, Scott reports to April Rascoe, National Director, Patient Dining Services. He has six years working with Morrison and a combined total of 18 years working in healthcare and food service industries. Scott works closely with MyDining and Compass IT to support openings, in addition to corporate and regional teams to maintain the field and corporate initiatives. Scott is a trainer in Morrison- branded patient dining standards and collaborates with allied departments to help drive patient services toward success while targeting patient satisfaction goals. He enjoys playing soccer and currently lives in Manasquan, New Jersey with his wife and three daughters. He earned his Biological Sciences Degree in Dietetics from Kansas State University. Ashley is a Division Director of Patient Dining for Morrison Healthcare and reports to April Rascoe, the Corporate Director of the Nutrition & Wellness Program. In her new role, she focuses on Patient Program Start-ups and the implementation of MyDining. Ashley has worked for the Compass FNS service line for the last eight years and has over 15 years of management service. She started with Compass as an hourly associate and quickly took advantage of career growth opportunities. Ashley is a native of Austin, TX but now lives in Charlotte with her two dogs and five turtles, all of which are rescues. She enjoys camping and hiking in her free time. For the past twelve years at Ochsner Health System in New Orleans in the Clinical Nutrition Manager Role, Randi worked extensively with various nutrition database systems, which include Computrition and MyDining. As a Clinical Nutrition Manager at Ochsner, she led 20 dietitians, 2 formula rooms, and opened the centralized call center to support 5 hospitals operating on room service. As the Nutrition Informatics Project Manager, she is responsible for collaborating with an accounts’ Information Technology Department for interface capabilities between the Electronic Medical Record and MyDining, coordinating menu database builds, communicating MyDining upgrades to end users and facilitate user and administrator training. Some of her professional affiliations include membership in the Academy of Nutrition and Dietetics and a member of Dietetics in Nutrition Support. She earned her undergraduate BS degree from Louisiana State University in Baton Rouge. After graduating, she completed her dietetic internship through the University of Southern Mississippi in Hattiesburg. Huyen reports to April Rascoe, National Director, Patient Dining Services in her new role as Divisional Director of Patient Dining. She is responsible for leading implementations and training accounts in MyDining, CTY, and other patient meal programs for new and existing accounts within her division territory. Before being promoted, she was the Regional Support Patient Services Manager for the Niner Region in assisting with new account openings for MyDining, CTY programs as well as action planning with accounts to increase patient satisfaction. Huyen has over 10 years of patient services and retail experience in healthcare, food, and nutrition with Sodexo and Aramark prior to joining Morrison in 2015.
