Did you knowmy daddy used to work at Disneyland? A long, long time ago, when Daddy was 19, he worked on the Jungle Cruise ride. Daddy still has the skipper jokes memorized, and he says he learned a lot about customer service while working at Disney. He says one of the most important things is to deliver on customer expectations and put yourself in their shoes — but I think my feet are too small to fit in anyone else’s shoes! Daddy isn’t the only person in our family who worked at Disneyland. My grandpa worked on the Skyway, my great-aunt Mary is Disney’s lawyer, and my great-uncle is Jim Cora, who worked with Disney for 43 years. He started on the Jungle Cruise, just like Daddy, and worked up to be president of Disneyland International. People call him a “Disney legend.” I feel really lucky that our family gets to have so much fun at Disneyland. When I grow up, I want to work at Disneyland too. Or maybe I’ll be a lawyer and help people like my mommy and daddy!

I’m Harlow Barnett, and my mommy and daddy said I get to tell you all about our family trip to Disneyland! We’re really lucky, because we live close to Disneyland and are able to go a lot. I love seeing all my favorite characters and going on rides. My favorite rides are It’s a Small World and the Enchanted Tiki Room. I like them because of the music and because they’re not scary. Lucky for me, even if I do go on a ride that’s a little scary, I never get too scared, because my big brother Finn is always there with me. If I start to feel scared, Finn will hold my hand and say, “It’s okay, Harlow, I’m right here next to you. It’s not real. It’s just pretend.” Finn’s so brave! I bet he’s not scared of anything, just like Mommy and Daddy.

Oatmeal Cookie Ice Cream Sandwiches

Ingredients

1 teaspoon kosher salt

1 1/2 sticks unsalted butter

3/4 cup light brown sugar, packed

1 1/2 ounces store-bought waffle cones, lightly crushed

1 large egg yolk

1 1/2 cups oats

2 teaspoons vanilla extract 4 pints ice cream (any flavor)

2 tablespoons all-purpose flour

Directions

4. Add egg mixture to food processor while spinning on low. Once integrated, slowly add browned butter; blend until dough forms a solid mass around blades. 5. Form dough into 26 balls and place 2 inches apart on a parchment-lined baking sheet. Flatten balls and bake 12–15 minutes or until edges begin to brown. 6. Let cool, then spread ice cream between cookies to make sandwiches. 7. Freeze for up to 5 days — or enjoy today!

1. Heat oven to 350 F. While oven is heating, cook butter in saucepan over medium heat until browned, 5–8 minutes. Scrape browned butter into a heatproof measuring glass. 2. Pulse waffle cones, oats, flour, and salt in a food processor or blender. Once cones are finely ground, add brown sugar and pulse again. 3. Whisk egg yolk, vanilla, and 2 tablespoons water in a small bowl.
