Roast whole chicken breasts with skins on and bones in to yield maximum flavor and juiciness, but remove the skins before eating if you’re counting calories - it’s the most fat- tening part of the chicken. Number of servings: 6 Ingredients: • 3 x 675 g (3 x 1 1/2 pounds) whole chick- en breasts, bones in and skins on • 30 ml (2 tbsp) olive oil, plus more for brushing • 1,4 kg (3 pounds) mixed small potatoes, such as red new potatoes • Yukon Gold potatoes and fingerlings • 1 head of garlic • 7 ml (1 1/2 tsp) kosher salt • 2 ml (1/2 tsp) freshly ground black pep- per • Fresh rosemary sprigs, for garnish Roast chicken with potatoes and garlic

Method: Let the chicken breasts stand at room tem- perature for 15 minutes. Preheat the oven to 200 ºC (400 ºF), with two racks centered. Lightly brush two 36 x 30,5 cm (14 x 12 inch) roasting pans with oil. The potatoes may be peeled or not, as desired. If the pota- toes are larger than 3,75 cm (1 1/2 inches) in diameter, cut them into 3,75 cm to 5 cm (1 1/2 to 2 inch) chunks. Separate the garlic head into cloves. Divide the potatoes and garlic cloves between the roasting pans. Drizzle the potatoes and garlic in each pan with 15 ml (1tbsp) olive oil. Lightly toss the potatoes and garlic until they are covered with the oil. Place 1 whole chicken breast, skin-side up, in one pan. Place the remaining 2 whole breasts in the other pan, skin-sides up. Sprinkle in each pan 3 ml (3/4 tsp) of salt and 1 ml (1/4 tsp) pepper. Roast for 30 min- utes. Rotate the pans in the oven, and use a spatula to turn the potatoes for even brown- ing. Continue to cook until the chicken skins are crisp and an instant-read thermometer inserted into the breast meat reads 95 ºC (180 ºF), 20 to 25 minutes. Don’t touch the bones with the thermometer; it will give a false reading. To serve, divide the potatoes evenly among six plates with a few cloves of roasted garlic for each person. Use a sharp knife to remove each half of the breast meat from the bone. Remove the skin from each serving before eating. Garnish with rose- mary sprigs. Serve.
