Sustainability is at the heart of what we do. We are committed to operating responsibly by partnering with producers who share our sustainability values. Our hotel continues to work towards clear environmental targets, including reducing plastic waste, increasing recycling, and separating all waste streams to minimise our footprint. We source locally wherever possible and partner with likeminded producers who share our commitment to responsible practices - such as Leigh Fish, a multi-generational operation focused on truly sustainable “catch-to-water” fishing, and Strait Speared, which supplies local, packaging-free, line-caught fish. Together, these partnerships help us champion local ecosystems, support community producers, and deliver sustainably sourced ingredients. By building strong relationships with our suppliers, we ensure every ingredient is selected with care and consideration.
Our cooking takes a classical approach, honouring tradition while offering thoughtful, healthy, and dietary-friendly options. We don’t over-complicate things - our focus is on letting quality ingredients speak for themselves.
