TASTAFE

Tasmanian butcher wins gold at national competitions A Tasmanian butcher has won a gold medal at Australia’s biggest skills competition. Doug Scott, who works at King Street Butcher in Dynnyrne, won gold in Retail Butchery at the WorldSkills Australian National Championships, held in Perth, WA in August. He was one of five TasTAFE trained apprentices and former apprentices to win a medal at the competitions, with winners announced via an online ceremony in late October. The WorldSkills competitions give vocationally trained young people the opportunity to test their skills on the national stage in practical skills challenges related to their industry. Doug credits experience in the industry, plenty of preparation and confidence in his ability as the keys to his success at the competitions where he competed against other young butchers from throughout Australia, with some competing remotely.

As well as practicing his skills at work when time allowed, Doug did some training tailored specifically to the competitions with his former TasTAFE Drysdale Butchery teacher, Darren Scott. “I think it helped prepare me. It was good to get good clean run-throughs of the competition right through with Darren. Here at work, I was able to practice and get things honed in but with how busy we can be in the shop, you’ve got to find time outside of this to do the training.” Doug is only 24, but has worked in butchery for more than 10 years and believes his experience also helped him in the competition. “I startedmy apprenticeshipwhen I was 16. I didn’t do college or anything like that, I was straight into it. And I worked in a butcher’s shop part-time before I even finished school so I think that helped me compared to people who are just starting off.” King Street Butcher owner, Paul Walker, said he has proud of Doug’s efforts. “He did a good job and studied hard. He had a good comprehension of what had to be done in the competition. He really put his time in and he paid a lot of attention and I think that’s why he came out on top.”
