FROM OUR TABLE TO YOURS: STICKY HONEY MUSTARD CHICKEN THIGHS WITH CRUNCHY SLAW
Refresh your palette in 2026 with this easy weeknight meal of tangy, flavorful chicken on a bed of crisp lime slaw.
SLAW
1 small green cabbage, thinly sliced 2 carrots, shaved 1 red onion, thinly sliced 1/3 cup chopped cilantro 2 tbsp lime juice 1 garlic clove, minced Big pinch of kosher salt and pepper 1/4 cup avocado oil 1 lb boneless, skinless chicken thighs Kosher salt and pepper 1/2 tsp garlic powder 1/2 tsp smoked paprika 3 tbsp dijon mustard 3 tbsp honey 2 tbsp apple cider vinegar CHICKEN
1. Slaw: In a large bowl, combine the cabbage, carrots, cilantro, and red onion. 2. In a small bowl, whisk together the lime juice, honey, garlic, salt, and pepper. Whisk in the oil until emulsified. Pour over slaw and toss well. 3. Chicken: Heat your broiler to high and make sure the oven rack is directly below (or two below). 4. Season the chicken all over with salt, pepper, smoked paprika, and garlic powder. Place it on a baking sheet. Broil for 6 minutes, then flip and broil for 6 more minutes. While broiling, whisk together the mustard, honey and vinegar. 5. As soon as the chicken is finished, brush with the honey mustard mixture. Return and broil for 1 minute. Flip the chicken and brush it again with the honey mustard. Broil for another minute. You can repeat this 1 or 2 more times, broiling for 30 seconds to 1 minute after each. When the chicken is done, brush more honey mustard on it and let it rest for 10 minutes. 6. Slice the chicken and serve it over the slaw. Enjoy!
