Raspberry Thumbprints with White Chocolate Drizzle 1 cup butter, softened 1/4 cup raspberry jam 1/2 cup white chocolate chips, melted Preheat oven to 375 degrees F. In large mixing bowl, cream butter and sugar. Gradually add flour; mix well. Shape dough into 1 1/4-inch balls; place on ungreased baking sheets. Using thumb, make small depression in center of each ball; fill with 1/4 teaspoon raspberry jam. Bake at 375 degrees for 10 to 12 minutes. Transfer to wire cooling racks. Drizzle melted chocolate over cookies. Let stand until set. Makes about 2 1/2 dozen. 1/2 cup granulated sugar 2 cups all-purpose flour

Gluten-Free Chocolate Pixies 3 eggs

1/4 cup tapioca starch 1/4 teaspoon plus 1/8 teaspoon xanthan gum 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup granulated sugar 1/2 cup powdered sugar

1 cup packed brown sugar 1 ½ teaspoons vanilla extract 1/4 cup unsalted butter 5 ounces unsweetened chocolate, chopped 3/4 cup millet flour 1/2 cup Dutch-processed cocoa powder

In large mixing bowl, combine eggs, brown sugar and vanilla; beat until pale in color. Melt butter and chocolate in small saucepan or microwave; stir until smooth. Cool slightly, then slowly whisk into egg mixture until well combined. In separate bowl, combine millet flour, cocoa powder, tapioca starch, xanthan gum, baking powder, baking soda and salt. Gradually add to egg and chocolate mixture; mix until thoroughly combined. Cover and refrigerate at least 1 hour. Preheat oven to 325 degrees F. Shape dough into 1-inch balls; roll in granulated sugar, then in powdered sugar. Place 2 inches apart on parchment paper-lined baking sheets. Bake at 325 degrees for 10 to 12 minutes; let cool on baking sheets. Makes about 3 dozen.
