Use ’em or Lose ’em! Warning: Your Insurance Benefits Won’t Roll Into 2018

No one likes to lose money. When we buy something online, then see the price drop 50 percent the next day, we curse our impatience; if we realize there’s a hole in our wallet and $100 has fallen out, it feels like a real punch to the gut; and if we spend all year paying the insurance company, only to see our benefits disappear on Jan. 1, we wonder why we even bothered. As frustrating as it is, insurance benefits don’t roll over into the new year. When you don’t use them before the clock strikes

midnight on Dec. 31, they vanish faster than Cinderella’s pumpkin carriage. If you’ve already paid your 2017 deductible, any work you get done now won’t require a new deductible payment. But if you wait two months, you’ll end up taking more money out of your own pocket. If you don’t use your benefits, you have basically set fire to your money, just to keep the insurance company warm. Slow Cooker Sweet Potato Soup Recipe

Ingredients

3 pounds sweet potatoes, roughly chopped

5 cups chicken or vegetable stock

1 cup coconut milk

• • • •

1 onion, chopped 2 stalks celery, sliced

Sea salt and freshly ground black pepper

2 medium carrots, chopped 1 tablespoon garlic, minced

Directions

4. Puree everything until smooth, using a blender or an immersion blender. 5. Add the coconut milk, give everything a good stir, and cook for another 30 minutes. 6. Adjust the seasonings and serve warm.

1. Place all the ingredients except for the coconut milk in a slow cooker. 2. Season everything to taste with sea salt and freshly ground black pepper. 3. Cover and cook on low for 6 hours or on high for 4 hours.
