His inspired menu reflects his love of Latin flavors and local, sustainable ingredients including the Baja California swordfish with house made green curry, basmati rice, cucumber, and Cajun citrus pepita crust and the Dry-Aged Ora King Salmon with bok choy, Japanese charcoal, red pepper, pea purée, ancho aioli, and mushrooms.
