Gallo developed his love of cooking in his mother’s kitchen, and his passion for Italian cuisine, veganism, and healthy living inspired the restaurant’s vegan and gluten-free menu items. “I’m really proud of our recent menu updates, especially the polipo e calamari (octopus and Calamari) appetizer. It’s super testy, light, and refreshing—perfect for summer!”
CIVICO 1845 REFLECTS OUR FAMILY PHILOSOPHY of representing what is today’s southern Italian culture through simplicity and the respect of the materia prima (ingredients), locally sourced and imported from Italy. “When I create a dish, I always get inspiration from my roots. I usually start from the traditional recipes I inherited form my family. Dishes that tell a story of Calabria, sometimes with a modern twist,” says executive chef Pietro Gallo.
