Sublime Seafood Shack Perfectly complimenting the tropical vibe of Canggu, Fishbone Local serves arrays of flavorsome seafood- based dishes made from local-produce sustainable ingredients. Text: Billianto Bagus Photos courtesy of: Fishbone Local Tucked on the side of Batubolong Main Street, just steps away from the famous Old Man’s beach area, Fishbone Local (FBL) is a cozy eatery serving ample selections of seafood goodness. The dining venue consist a breezy open-air space with roofless lawn area on the backyard, overlooking lush greenery. Fishbone Local is also the first of several planned venues for Brett Hospitality Group—a Bali-based joint venture between founder and restaurateur Dominique Brett, executive chef Benjamin Cross and venue developer Brant Bauer. Open for lunch until dinner, Fishbone values the importance of sustainability. The seafood and other produces they uses as ingredients are sourced from Bali’s local communities, and served with simple, unpretentious presentation and precise taste. For an opener, have a plate of Tuna Tostada; Mexican-inspired goodness which consists a fine combination of avocado, sushi-grade tuna cubes, chipotle and local favorite ‘Sambal Matah’ (raw shallot, lemongrass, chili) condiments on top of crunchy corn tortilla. Then, a portion of Prawn Toast could be your next pick; oriental-style soft prawn cake with sesame seed and crispy toast bread, glazed in sweet and sour chili sauce.
For the main treat, Fishbone Local certainly does not disappoint with their ocean-based selections. Try their Black Cod, for example; beautifully cooked over coal until moist and blends perfectly with the sweet chili paste. Enjoy this gorgeous menu with Sautéed Greens and Baby Corns side for a great vegetal addition to the dish. Or, for a more classic take, order the Pan-Seared Barramundi, which combines a satisfying crispy skin and tender meat to your palate; accompanied with another batch of ‘Sambal Matah’ on-side. The soft barramundi fillet is generously-sized, fresh and clean, with no oily aftertaste whatsoever. If you crave for a more non-seafood feast, worry not, as Fishbone Local also serves delightful lines of main course on their ‘Something Else’ section; which consist lots of international favorites from Korean Fried Chicken to Aus Angus Beef Burger. To wrap up your satisfying dine session, Fishbone Local also serves some trusty dessert such as Deep Fried Snickers— because why not.
