The Last Sip Well there you have it and thank you for making it to the last page – Congrats (sorry no prizes)… Unless you are like Alex Hendry, you’ve packed up your swim trunks and are officially walking around with your Ardbeg tuques (well I am...) I feel a chill in the air and as I read through many of our articles in this edition I couldn’t help but pull out a few of my own iconic or legendary drams.

Aaron: Hockey has changed plenty since I started watching when helmets were optional. What positive changes come to mind in the distilling industry recently? Mark: The fact that more women are coming into both as distillers and coaches is the most positive change. I think the more diversity in both, the better both will be long-term. Aaron: Amen! Waving my magic hockey stick, I’m making you Commissioner of Hockey and Whisky. Make some changes, Mark, and we promise not to boo you like Gary Bettman. Mark: Whisky: I’d ban the use or caramel coloring and chill-filtering, and immediately decree that all whiskies be available in all Canadian provinces! Hockey: I’d get rid of the rule that allows shorthanded teams to ice the puck at will without fear of being called for icing, extend overtime to 10 minutes, and ban teams from going over and back across the red line before taking a shot on net.

May it be a newbie’s venture in the world of Irish Whiskies or the hilarious adventure of visiting the warmer climates of Vanuatu Island, our contributors truly did their homework and brought to you some great articles of the icons, pioneers and traditions we all love so much. Without the trailblazers like Mark Gillespie or the likes of Mr. George we might all be in the dark about the wonderful thing we call whisky.

Aaron: Time to put on the foil! It’s Game 7 and your Flyers are 60 minutes from hoisting the Cup. What’s your #hockeydram?

Mark: Ask me that 59 minutes later and I can tell you. It’s been 50 years since the Flyers last won the Stanley Cup so I’d likely try to find something from 1974-75 in my sample collection. Mark Gillespie can be found longing for the days of Bobby Clarke and Bernie Parent in his New Jersey WhiskyCast studio, and hopefully not sharing a whisky with Gritty.

Aaron: Shoresy is better than Ted Lasso in my opinion. Your favorite hockey and/or whisky themed movie?

Mark: “Slap Shot” has to be my favorite, though it doesn’t hold up well today in a more enlightened time. Whisky-wise, “The Angel’s Share” is my favorite, not least for Charlie MacLean’s cameo.
