TASTY RECIPE MINTED COUSCOUS SALAD

Jeffrey was raised in Pitts, GA and graduated from Crisp Academy in 2011. He attended Georgia Southern University where he received his B.S. in Biology with a minor in Finance. Upon graduation, Jeffrey returned home and acquired a summer job as a rehab tech with SWGA Rehab. During this time, he was currently scheduled to begin pharmacy school
INGREDIENTS • 1 cup dry couscous • 1 cup jarred roasted red peppers • 2 tbsp olive oil
• Juice from 1/2 lemon • 1 tomato, seeded and diced • 1 English cucumber, diced • 1/2 cup mint (or flat-leaf parsley) • Salt and pepper
DIRECTIONS Cook the couscous according to package directions. Fluff with fork. Meanwhile, dice roasted red peppers and add diced tomato and cucumber to a bowl. Add lemon juice and olive oil and stir to combine. Finely chopmint (or parsley) and add to bowl, along with the cooked couscous, and toss to combine. Season with salt and pepper to taste. Enjoy!
at Mercer University. However, his experience at SWGA Rehab revealed to him that Physical Therapy was his calling. He began pursuing his Doctorate in Physical Therapy at Augusta University, and officially graduated May 8, 2020. He has passed his boards, and has joined our staff in the clinic! We are so excited to have Jeffrey back with us at Fyzical Therapy & Balance Centers. His favorite hobbies include playing basketball, golfing, fishing (especially saltwater), hunting, working out, and spending time with family and friends. I have been dating my girlfriend Taylor, who is an SLP at Crisp County Primary School, for three years. Jeffrey says, “I hope to help the company to continue to serve the community as best possible.”
