We Cooked Pizza in Italy! A Delicious Way to Celebrate National Pizza Month

Laura and I both dug into delicious pizzas that night, and it was a lot of fun to learn something new together. When we left Italy, we packed a bag of Italian pizza flour into our suitcase so we could replicate the experience at home. We put our new skills to the test with Kaden and Macy, and it went so well that we now make pizza as a family once a month. We’ve tried our homemade pizza in a variety of ways — including on a pizza stone perched over open flames on the barbecue — but we’ve settled on the oven. October is National Pizza Month, so we’ll definitely be making homemade pies at least once to celebrate. I can already imagine Macy piling her crust high with her signature black olives and jalapeños. A few years ago, my wife and I traveled to Florence, Italy, for her 40th birthday. We wandered up and down the crooked streets, craned our necks to look at the terracotta dome of the Duomo Cathedral, and ate as much pizza, pasta, and gelato as humanly possible. The entire trip was amazing, but one of the highlights for me was our couple’s cooking class. The theme of the class was “pizza and wine.” We gathered in a big kitchen with four other couples, a pizza oven, and a local chef. The chef walked us through the whole process of making pizza from scratch. We started with the dough (made from special Italian pizza flour), and I learned a few tips right away. 1. When you’re kneading your dough, don’t overwork it. That’s a recipe for disaster. 2. Add a little olive oil to the dough to help you roll it out properly. 3. Take care to roll out the dough evenly so it holds up and cooks correctly. My wife, Laura, learned No. 3 the hard way. She had some trouble with her dough and ended up eating her pizza more like a calzone than a traditional pie. My pizza, though, came out perfectly! I’m usually not much of a cook, so I was pretty excited about my “win.” After we rolled out our crust, we spread a thin layer of tomato sauce over the dough. Then we added cheese, tomato slices, onions, olives, and garlic to our pies. My favorite part of the class was sliding my

Meet Junoe, Our New PT Assistant!
A Quick Learner, Dog Dad, and All-Around Great Guy

Growing up, Junoe had an uncle with muscular dystrophy and often tagged along to his PT sessions. He watched as the treatment transformed his uncle’s quality of life, and that experience inspired him to pursue a career in PT. His passion really comes through in the office — as we’re sure you’ll see! Outside of work, Junoe loves snowboarding, traveling, and spending time with friends and family. Plus, he and his girlfriend recently adopted an adorable golden retriever puppy. If you meet Junoe during your next session, make sure you ask to see puppy pictures. CREAMY BAKED PUMPKIN RISOTTO

5 cups of low-sodium chicken or vegetable broth
1/2 cup fresh basil, chopped

1/4 cup grated Parmesan cheese 2 tbsp mascarpone cheese
2 cups of pumpkin, diced
1 1/2 cups canned pumpkin purée

Directions
1. Heat the oven to 400 F and arrange a rack in the middle. 2. In a 3-quart baking dish, combine broth, rice, diced and puréed pumpkin, and onion. 3. Season with salt and pepper, then stir until evenly combined. 4. Cover tightly with aluminum foil and bake until water has been absorbed and rice granules are puffed. 5. Remove from the oven and stir in basil, grated Parmesan cheese, mascarpone cheese, and olive oil.
