Fabio Trabocchi opened his flagship restau- rant Fiola in downtown Washington D.C., which earned its first Michelin star in 2018, and its sixth consecutive star in 2023. In the Southwest sec- tor of DC, The Wharf has re-established the wa- terfront part of the city and a destination where Trabocchi introduced Del Mar, a celebration of Spanish culture and coastal cuisine. Designed entirely in Spain by the celebrated Lázaro Rosa-Violán and assembled by a team of Spanish artisans to celebrate the culture’s food, craftsmanship, and lifestyle, it is a two-sto- ry jewel box that overlooks the Potomac River. Trabocchi, an internationally-acclaimed chef and restaurateur based in the District and Boca Raton, is the founder and owner of Fabio Tra- bocchi Restaurants, home to award-winning restaurants in the U.S. Trabocchi grew up in Le Marche, Italy, on the Adriatic Coast. His love

for food was inspired by his father, a passion- ate farmer and gardener, who grew all of the food that the family ate. Chef Fabio pursued his formal culinary education at the Istituto Alber- ghiero Panziniin Senigallia, Italy. Since 2011, he has focused on expanding Fabio Trabocchi Restaurants to become one of the preeminent restaurant groups in the world. Patrons typically insist on a sampling through- out the entire menu, as one suggested “we come here to enjoy, not to become full.” Osci- etra Royal Caviar followed by Ibérico ham fritters are likely paired with the one of the thoughtful cocktails that evolve with each sea- son. Paella is a pillar of Spanish gastronomy and Del Mar’s pinnacle. Sharing entrees is expected as guests explore their way through the menu.

Fabio Trabocchi’s touch is not lost on any of his restaurant concepts. Design, menu, and wine selection are all part of his highly-personal venture.
