Prep time: 20 minutes, plus 30 minutes to chill Servings: 4
Ingredients • 1/2 cup mayonnaise • 1 French shallot, finely chopped • 1 tsp. of curry powder (or more, depending on your tastes) • 2 avocados, pitted and diced • 1 tbsp. lemon juice • 1 cup crab meat (or imitation crab cut into rounds) • Mint or parsley, to garnish

Directions In a small bowl, combine mayonnaise, shallot and curry, and mix well. Set aside. In another small bowl, gently coat the diced avocados with lemon juice to prevent them from browning.
Divide half of the diced avocados and spoon into four shot glasses (or small jars). Do the same with the crab. Add a second layer of avocado and crab in each glass. Sprinkle with mint or parsley. Refrigerate at least 30 minutes before serving.
