JUST GO! Jo Ann’s Inspiring Attitude Led Her to Alaska!
For such a big world, it’s funny how small it can be sometimes! Back in August, Robin, our marketing and events coordinator, ran into one of our longtime clients, Jo Ann, in the ladies’ room at the Jacksonville International Airport. Jo Ann was off to Alaska with one of her good friends and was about to board her flight! What made this trip extra special was that Alaska was a destination that Jo Ann had hoped to check off her bucket list for many years; and, in that moment, she made her dream come true. “Several years ago, I was looking at a magazine, and it showed Anchorage nestled at the bottom of many beautiful snowcapped mountains,” Jo Ann recollects. “I thought to myself, ‘I’d really like to go there someday,’ and then this past August, I decided to just go! ” Jo Ann had a fabulous time! AAA helped her map out her trip. She and her friend decided on a cruise tour. They spent four days traveling by historic railroads, small boats, buses, and trams and then boarded a seven-day cruise ship. It was the best of both worlds
— they had the opportunity to get up close and personal with wildlife and sights on land and sea. “Cruising up close to massive glaciers was my favorite part,” she tells us. “I had always thought that glaciers were white, but, in person, they are a beautiful light blue. I also enjoyed seeing the sled dogs in operation and having the opportunity to see how they are trained and how excited they are to get in the harness and run!” Jo Ann’s decision to “just go” is advice we all can take and live by! “Alaska was one of the last things lingering on my bucket list, and I’m so thrilled I did it. I hope that everyone can experience the rawness and beauty of it,” Jo Ann exclaims. “This trip fueled my appetite for more adventure. Now my sights are set on Cairo, Egypt!” Jo Ann, we are so happy to hear you had a fantastic trip! Thank you for inspiring us all to embrace adventure and, when the time is right, to just go!

Beet Salad

INGREDIENTS

5–6 medium beets

1/2 tsp honey
1/4 cup extra-virgin olive oil 2 tbsp sherry or white-wine vinegar
1/2 tsp salt
Freshly ground pepper, to taste 1 large shallot, finely chopped 1 stalk celery, finely chopped

1/2 tsp Dijon mustard
DIRECTIONS
1. Preheat oven to 400 F. Separate beets between 2 pieces of foil; bring edges together and crimp to make packets. Roast until beets are just tender when pierced with a knife, about 1 1/4 hours. Unwrap beets and let cool. 2. Meanwhile, in a small bowl, whisk oil, vinegar, mustard, honey, salt, and pepper to make dressing. 3. When beets are cool enough to handle, peel off skins. Cut into 1/2-inch cubes and place in a large bowl. Add celery, shallot, and dressing, then toss to coat well. Serve at room temperature or chilled.
