METHOD 1. Pre heat oven to 160C. 2. Peel and finely dice onions. Peel, top and tail carrots and thickly slice. Wash, trim and chop celery into large pieces.
3. Wash sprigs of thyme. Pick, wash and chop flat leaf parsley. 4. Prepare beef stock as per manufacturer’s instructions.
5. Slice baguettes into 10 slices. Brush with olive oil and char grill until toasted. 6. Pan fry vegetables in olive oil for 4 - 5 minutes until softened but not browned. Remove and set aside. 7. Toss diced beef in seasoned plain flour till well coated. 8. Add more olive oil to the pan and fry the diced beef over a high heat till browned. Set aside with the vegetable mix. 9. Add the Dead Pony Club and tomato paste to the pan scraping all the residue off the bottom. Add the beef stock, half the cracked black pepper, thyme and bay leaves. 10. Bring to the boil and add the diced beef, vegetable mix, plum tomatoes and Worcestershire sauce. Cover tightly with parchment and tin foil, place in the oven for 2 hours. 11. Stir the beef every 30 minutes and check after 2 hours. If not quite tender return to the oven and check regularly until cooked. 12. When cooked remove from the oven and check for seasoning and consistency. Remove lay leaves and thyme sprigs. 13. Serve in bowls with char grilled croutons and sprinkle with remaining thyme sprigs and chopped flat leaf parsley.

METHOD 1. Defrost haddock and pat dry. 2. Pre heat the fryer to 180C. 3. Blanch peas and chill. Blitz peas to a coarse blend and season with 2g sea salt. 4. For the batter mix combine the cornflour, 500g plain flour and 4g sea salt together. 5. Make a well in the middle and add the ale and the white wine vinegar. Whisk till the batter is the consistency of double cream. 6. Wash and cut lemons in half and sear on the grill. 7. Dip the haddock fillets into the remaining plain flour and shake off the excess. 8. Stir the batter again to check that nothing has settled. 9. In batches dip the floured haddock fillets one at a time through the batter mix. 10. Fry haddock for 5 - 6 minutes till golden brown and crisp. Remove from the fryer and drain on kitchen paper and allowing to rest for 1 minute. 11. Reheat the pea puree while haddock is cooking. Fry chips until golden and toss with sea salt. 12. Serve plated the battered haddock, chips, pea puree, half lemon, tartare sauce and bread & butter pickles.

METHOD 1. Blitz digestive biscuits in food processor to a fine crumb and melt the butter. 2. Combine butter and digestive biscuit crumb until it comes together. 3. Line brownie tin with baking parchment. 4. Press digestive biscuit mix into the base of the brownie tin ensuring it is even and smooth. Place brownie tin in refrigerator. 5. Add room temperature Mascarpone, peanut butter and icing sugar to a mixing machine and beat to combine. 6. Mix through by hand the Bitter & Twisted, vanilla extract and 1g sea salt. 7. Whisk in 410ml double cream to stiff peaks. 8. Fold the double cream through the Mascarpone and peanut butter mix 10. Heat remaining double cream in saucepan to boil and remove from the heat. Add the chocolate callets and mix to a smooth consistency. Stir through 1g sea salt. 11. Set aside to cool slightly. Finally pour the chocolate cream over the peanut butter cake and smooth over. 12. Chill in the refrigerator for at least 4 hours before cutting into portions. until just combined and add to the brownie tin. 9. Place the brownie tin back in the refrigerator.

One evening in 1992, some schoolteacher friends met in a local pub – Someone jokingly suggested setting up a brewery, at the time there were just six small independent breweries in Scotland – Three years later, Isle of Skye Brewing were finally ready to brew their first ale – Red Cuillin. Isle of Skye use as much locally sourced ingredients as possible, provenance is extremely important, in fact only the name has changed – thanks to present owner, Kenny Webster – it’s now called Skye Red.

The taste of grain has always been a vital part of the Scottish brewing tradition. The result is an ale with the flavour of gentle hops, a creamy head and just the right amount of bitterness.
Malted barley is a vital part of the Scottish brewing tradition. We use three different varieties to create the deep colour and smooth nuttiness; each grain is milled right here in our brewery, giving us complete control over flavour and freshness.

METHOD 1. Mix cocoa powder with 200ml of the Skye Red Ale and allow to infuse. 2. Grease a parchment lined baking tin with 20g softened butter 3. Sift the plain flour, bicarbonate of soda and baking powder together. 4. Beat the soft brown sugar with 110g butter until soft and creamy. Beat in the eggs one at a time and then add the cocoa mix. 5. Finally add the sifted dry ingredients a little at a time and mix ensuring all is incorporated at each stage. 6. Put mix in the lined baking tin and bake in the pre-heated oven for 30-35 minutes until cooked. Test with skewer and check skewer comes out clean. 7. Remove cake and allow to cool on a wire rack. 8. Whilst the cake is cooling make the chocolate & Skye Red Ale icing. Melt the chocolate callets. 9. Beat the icing sugar and 80g softened butter together into a smooth paste then beat in 75ml Skye Red Ale. Fold in the melted chocolate callets and spread the chocolate icing over the cake and allow to set. 10. Melt white chocolate callets and make small zig - zags on cling film lined tray and allow to set. 11. Cut portions onto plate and serve with white chocolate decorations. Dust with remaining cocoa powder and serve.

METHOD 1. Defrost venison in controlled environment.

2. Prepare the vegetables and herbs. Peel and roughly chop the carrots, swede, and celery. Peel and crush garlic. Wash sprigs of thyme. Pick, wash and chop flat leaf parsley. 3. Prepare beef stock as per manufacturer’s instructions. 4. Slice batons into 10 slices. Brush with olive oil and grill until toasted. 5. Pre heat oven to 160c. 6. In heavy bottomed pan fry the vegetables for 4 - 5 minutes in 50ml olive oil, add the garlic and fry for a further minute. Remove vegetables and set aside. 7. Toss venison with seasoned plain flour until well coated. 8. Add a further 50ml olive oil to the pan and fry the venison over a high heat till well browned. Set aside with the vegetable mix. 9. Add half the redcurrant jelly to the pan along with the Dark Island and tomato paste. Bring to the boil scraping all the residue from the bottom of the pan. Add the beef stock, thyme, bay leaves, venison and vegetables. 10. Bring to the boil and cover with tightly with parchment and tin foil. Place in the oven for 90 - 120 minutes. 11. When venison is cooked remove from oven and check the seasoning and add remaining redcurrant jelly. Remove sprigs of thyme and bay leaves. 12. Serve with char grilled croutons and sprinkle with chopped flat leaf parsley.

METHOD 1. Peel and finely slice onions. Wash and slice leeks. 2. Wash and pick thyme leaves. Wash and chop flat leaf parsley. 3. Place pouch of frozen cooked mussels in pan of boiling water for approximately 8 minutes. 4. Place large saucepan on high heat and add the butter and olive oil. 5. When the butter is bubbling add the pancetta and cook for 4 - 5 minutes. Stir in the leeks, onion and thyme leaves and cook for a further 3 - 4 minutes until onions and leeks have softened. 6. Turn up the heat and add the Arran mustard, Whisky Cask Cider and double cream and bring back to the boil. 7. Drain most of the stock from the mussels and add to the sauce. Bring to the boil with a lid on for around 3 minutes shaking the pan 2 - 3 times. 8. Discard any mussels which have not opened.

METHOD 1. Pre heat fryer to 180c. 2. Trim leaves off the cauliflower and cut into small florets. 3. Peel, wash and slice the spring onions and chillies. Keep in iced water. 4. Pick and wash the coriander and cut limes into quarter wedges. 5. Place cauliflower wings into a bowl and dust with plain flour ensuring they are all coated. 6. In separate bowl combine the self raising flour, mint, cumin and turmeric. Combine thoroughly. 7. Slowly add the Scottish Pure Apple Cider and whisk to a smooth batter. 8. Shake excess flour from cauliflower florets. Working one at a time, dip cauliflower in cider batter and allow excess to drain away. 9. Working one at a time place cauliflower florets in fryer, turning occasionally. Deep fry for 4 - 5 minutes. 10. Drain on kitchen paper and sprinkle with sea salt and cracked black pepper. 11. Allow cauliflower florets to rest for 1 - 2 minutes under kitchen lights. 12. Serve crisp cauliflower wings topped with spring onions, red chillies, and coriander leaves. 13. Serve half lime, garlic aioli and Frank’s RedHot Sauce on the side.

METHOD 1. Peel and chop the potatoes and swede into even sized chunks and put in water. 2. Remove outer packaging and cut haggis into 6 rounds. Peel and finely dice the shallots. Juice the lemon. Wash and snip the chives. 3. Boil potatoes in salted water till tender, mash and mix in nutmeg, butter and season with cracked black pepper. 4. Boil swede in salted water till tender. When cooked mash till smooth and mix in 25g butter and season with cracked black pepper. 5. In sauté pan melt 25g butter and cook the diced shallots. Add the Bell’s Original Whisky and burn off the alcohol. Add the Dijon mustard and double cream. Bring to the boil and allow to reduce by 1/3. 6. Add lemon juice and remove from heat. Check seasoning and finish with snipped chives. 7. Reheat haggis and place on warm service plate and serve with Bell’s Whisky cream and chive sauce for your “Haggis, Neeps ‘n’ Tatties”.
