100g Shallots C 12011 20ml Bell’s Original Whisky A 130987 5g Brakes Dijon Mustard A 84536 250g Graham’s Fresh Scottish Double Cream C 115856 100g Lemons C114218 20g Premium Large Chives Bunch C 113880
METHOD 1. Peel and chop the potatoes and swede into even sized chunks and put in water. 2. Remove outer packaging and cut haggis into 6 rounds. Peel and finely dice the shallots. Juice the lemon. Wash and snip the chives. 3. Boil potatoes in salted water till tender, mash and mix in nutmeg, butter and season with cracked black pepper. 4. Boil swede in salted water till tender. When cooked mash till smooth and mix in 25g butter and season with cracked black pepper. 5. In sauté pan melt 25g butter and cook the diced shallots. Add the Bell’s Original Whisky and burn off the alcohol. Add the Dijon mustard and double cream. Bring to the boil and allow to reduce by 1/3. 6. Add lemon juice and remove from heat. Check seasoning and finish with snipped chives. 7. Reheat haggis and place on warm service plate and serve with Bell’s Whisky cream and chive sauce for your “Haggis, Neeps ‘n’ Tatties”.
