He spoke about each beer the same way we talk about cigars, discussing the different ages, fermentations, and processes that make each one special. He possessed incredible knowledge of each beer and spoke of beer being the “intersection of art and science”, which really struck home for us. Before we even picked out beers for our flight, he offered us a sample of a special Polish style smoked Pilsner call Bicz, that was fantastic. Each beer we tried was even better than the last, offering us something unique and complex. From milky stouts to heavy IPAs, they really had something for everyone. The Blunt Ale was a real treat, as its smell and aroma had that perfect mix of fruit and tobacco. While Nick was a big fan of their East Coast Double IPA, I really fell for their special limited edition barleywine called “Waiting for My Eyes to Adjust”. This complex delight was aged in bourbon barrels and infused with blueberries, cinnamon, vanilla and maple syrup. With each sip, I was thinking how well this would pair with our special Baccarat Barber Pole Rothschild. The blend of sweet notes, and a smooth complex profile would make this a pairing for the ages. After our final tasting, we sat outside to eat some delicious pizza from Julio's before moving on to our next destination, Kane Brewing company. Kane is a bit more well
