Amir-Agin han [inn], Isa-Bey’s ham- mam [Turkish baths] etc. The sur- rounding area, with the Stari Ras Fortress and Sopoćani Monastery, is under the protection of UNESCO. The wealth of Islamic and Christian heritage here is priceless, with the Eastern and Western worlds having met in this place since ancient times. Ćevapi and mantije Novi Pazar natives are also proud of the gastronomic treasures of their long tradition. Their local fla- vours represent unforgettable mem- ories for others. To such an extent that local Pazar specialities of man- tije (dumplings) and ćevapi kebabs have become a modern “brand”. There are many ćevapi outlets in Novi Pazar, and every master has their own secret that isn’t revealed. Ćevapi are eaten here in bread buns or in pita bread, served with diced onion and spicy ground pepper. Mantija are anoth- er gastronomic symbol of this city. The hands of masters first skilfully stretch the dough to form a round,
thin crust. They then cover its edges with the finest beef or mutton that’s been fried with onions, after which they twist the filled dough and ex- pertly shape it like sculptors to form packets, arranging them side by side in a round baking tray. Served on a tin plate, these dumplings are so com- plicated, yet look so simple. Before serving, they are topped with sour milk infused with chopped garlic and fried a little more... NOT EVERY CITY HAS THE KIND OF TREASURES possessed by Novi Pazar. It has many riches, the greatest of which are the Pazar people themselves: educated, mod- ern, but loyal to tradition, sociable, hospitable and cheerful people who know what work is, and what en- joyment and pleasure are. This city of teahouses, pastry shops and ćevapi bars has spread along the slopes of Golija, which is to- day a nature park. At the heart of the bazaar are the Altun-Alem Mosque,
