Helping the community live their healthiest lives By Staci Rae Living our best lives starts with good health. When we take care of our bodies, we feel our best, we are energized, and we are best equipped to take on all the other areas of our lives. From work to play, everything we do stems from how we treat our bodies. Angie Mailhot and Kevin Farrow understand this, and they are committed to helping the St. Thomas community live their healthiest lives yet. That’s the driving force behind their new store, Railway City Health Hut, located in the Elgin Centre, which opened in October of this year. For Angie, who has a background in corporate wellness, opening a brick-and-mortar store was “a nice step to give us a face in the community.” It was a way for her and Kevin (who is her cousin!) to bring their cumulative knowledge of, and passion for, whole-body wellness directly to the community. When Angie approached Kevin with her idea of opening a health and wellness store, he jumped at the chance. Kevin had always been looking for ways to be his healthiest, both for his own benefit and so that he could use that knowledge to help others. He had also been looking for the right opportunity to start a business, and the pieces just fell into place. Railway City Health Hut offers a wide variety of health and wellness products, from probiotics and digestive aids to vitamin and mineral support, healthy salts, nuts, ghee, teas, healthy snacks and personal care products such as natural body care and essential oils. “We’re expanding every day,” says Angie. They also offer locally produced products such as Booch kombucha and Pristine olive oil. In addition to their extensive product lineup, Angie and Kevin feel that educating the public on health and wellness is so important. “Education is the big picture for me,” says Angie. “We are expanding outside of these four walls,” she explains. One of the ways they plan to do that is by offering wellness seminars to the community in the new year. Although the specific topics aren’t yet fully decided, they will include things such as how to hit the reset button on your health after the indulgent holiday season. 12 straight hours of Christmas cheer! By Staci Rae For many people, one of the best ways to get into the Christmas spirit is to listen to those perennial classic Christmas songs from morning until night. On Saturday, December 14th at Central United Church, you can do just that. This year marks the 3rd Annual 12 Hours of Christmas Music Marathon event, and this year’s concert promises to be every bit as much festive fun as the previous years. Beginning at 9am, a variety of different choirs and musical groups will take turns filling the air with their own brand of festive music until 9pm. The acts include a wide range of musical stylings, including Lunch Bunch, Ukes of Hazzard, Santa’s Jammers, Central United Church’s choirs, Keltic Knights and so many others. There is definitely something for everyone. The exact schedule will be available in advance of the event, so you can plan your day. “Come and go as you please,” says co-organizer Lauri Ladd. “It’s really laid back.”

The 12 Hours of Christmas Music Concert is nothing like what you might expect from church. There is no expectation of hushed voices – in fact, quite the opposite! This fun-filled event is mean to be a celebration in every sense. Everyone is encouraged to sing along and celebrate the seasonwith the community, whether you come for an hour or stay all day. “It’s a great event for the whole community, not just ‘church people,’” says Lauri. “It’s a big Christmas house party, accessible to everyone!” In addition to the awesome music, this year’s event will also include other festivities such as a Santa dance party, photo booth, face painting, community/first responders lunch hour, and stories with Scrooge! It is truly a family affair, suitable for everyone from your littlest carollers to grandma and grandpa. So, gather the family together and head to Central United Church for some honest-to- goodness, festive family fun! Admission is by free will donation to Inn Out of the Cold. support and encouragement she received to do so. Having worked alongside Joe Preston as his Constituency Assistant, she felt very plugged in to the community, and both Joe and others suggested that maybe running for office was a good next step for her. “It felt like the right fit for me,” Karen explains. This time around, her answer was straightforward as well: “My job wasn’t done. I still have a lot to share.” When it comes to priorities for her time in office, Karen has looked to the community for its input. “One thing I really heard from a lot of people is [the problem of] seniors falling behind,” she explains. “The areas of affordability, housing, and jobs will be priorities, too” she says. “It’s about giving everybody a hand up. How do we all work together build a better community?” All successes start from a point of inspiration, and Karen is quick to point out some of the people who have inspired her along the way. “Joe Preston will always be one of my number- one influences. I look at him as being really inspirational,” she says. Karen also includes her family and her husband in her list of personal inspirations, but she also says that the community is a big source of inspiration for her, too: “Everybody I meet inspires me,” she explains. One of the things we just had to know was what Karen did immediately following her election victory this time. Her answer, not surprising to anyone who has met Karen, was very grounded: “I got up and I took my son to school, then saw my mom and dad, trying to ground myself. Lots of interviews, and then I ate with my family.” Speaking of staying grounded, one of Karen’s happy places is in the kitchen. With the holiday season upon us, Karen is looking forward to getting into her kitchen and getting some

baking done, an activity that helps her decompress from her busy job in the public. Rumour has it she bakes a mean sugar cookie and whipped shortbread, and in my book, there’s absolutely nothing wrong with that. Karen was born and raised in Sparta and we asked her what she would do in Elgin County if she had a whole day to herself (a very rare treat, I’m sure). She said she would first head to Port Bruce Beach for some relaxation. Then, when hunger struck, she’d head to Mackie’s for their famous fries, and then to the trout hatchery in Port Stanley. “I love being outdoors,” she says. So, there you have it: A little peak into the work and play lives of Karen Vecchio, MP! Next time you see her in the community, be sure to stop for a chat. She’s always happy to meet the people in our neighbourhood!

Shebaz’s Shawarma and Falafel is now in St. Thomas! By Staci Rae Shebaz’s Shawarma and Falafel has been a mainstay in the Port Stanley culinary scene for four years, and this year, owners Gabriel and Doris Chordekar decided to test the waters in the St. Thomas market by bringing their delicious offerings to the Horton Farmers Market every Saturday morning. That experiment was successful to say the least, and they knew that St. Thomas was the right direction in which to expand their business, so last month, they opened a new location at the corner of South Edgeware and Burwell Rds. If you’re a frequent visitor of their Port Stanley location, don’t worry! They aren’t closing that location. They simply wanted to find a way to bring their tasty Middle Eastern / Indian fusion dishes (which, by the way, is my culinary dream come true) to even more people, bringing the food they love to a new audience. The menu at Shebaz’s is an eclectic mix of Middle Eastern and Indian specialities. Here, you’ll find a variety of wraps such as shawarma and falafel, salads, soups, samosas, rice bowls, and more. And because they want to be respectful of their clientele’s varied dietary requirements, they offer vegetarian/vegan and gluten-free options as well as dishes that are perfect for those following a ketogenic lifestyle. In everything they do, quality is priority number-one for Doris and Gabriel. “If I would not eat it in my house, I will not serve it to you,” says Doris. Gabriel is a trained chef, having studied in Israel, and together with Doris, he is proud to bring his talent for bringing the foods of that region (where the couple lived for a while) and the food of India, where they were both born. The couple’s passion for bringing people together through food is obvious from the first moment you meet them. They are quick to make recommendations for those who may be unfamiliar with the cuisine they offer, and they are always happy to offer a sample if someone isn’t quite sure what to order. One of their bestsellers, shawarma fries, is the perfect blend of Middle Eastern flavours and something familiar. The St. Thomas location is open Monday through Saturday, from 11am to 9pm. Make memories, not breakfast By Staci Rae

Let’s face it: Christmas morning is busy. Why add more stress into the mix? With a little planning, you can serve your family a delicious, festive breakfast while barely lifting a finger Christmas morning, leaving more time for making memories. First up: The recipes! We’ve got one sweet and one savoury, depending on which is more in line with your family’s tastes (Or you could make both!) Crockpot Cinnamon-Bun Casserole Ingredients: 2 tubes of cinnamon rolls (such as Pillsbury) cut into quarters, divided (do not discard icing packets) 4 large eggs ½ cup heavy cream 3 tbsp real maple syrup 2 tsp vanilla 2 tsp cinnamon ¼ tsp nutmeg Instructions: 1. Spray a six-quart crockpot with non-stick spray. 2. Cover the bottom of the crockpot with a layer of cinnamon roll pieces 3. Whisk eggs, cream, maple syrup, vanilla, cinnamon and nutmeg together until well combined. 4. Pour egg mixture evenly over the cinnamon roll pieces in the crockpot. 5. Place remaining pieces of cinnamon roll on top and drizzle one packet of icing evenly over top. THE TURKEY SHOPPE

6. Set your crockpot’s timer so that the mixture will start to cook overnight, about 2.5 hours before you want to eat. (If your crockpot doesn’t have a timer, don’t worry! You’ll very likely be up early on Christmas morning anyway, so just remember to turn it on first thing and you’ll be eating brunch right on time). 7. When the timer goes, drizzle the remaining icing on top of the casserole and serve warm! Sausage and Hash Brown Breakfast Casserole – Makes 8 servings Ingredients: 2 pounds pork sausage, casings removed (turkey or vegetarian sausage will work fine, too) 20 ounces frozen shredded hash browns

Instructions: (The night before) Add the vegetables and about half the cheese to a 9x13 baking dish. In a large pan over medium heat, cook the hash browns in a small amount of oil until browned, usually 5-10 minutes. Transfer to baking dish. In the same pan, cook the sausages over medium heat, breaking apart the meat and cooking until nicely browned, approximately 10-12 minutes. Drain off any fat and add sausages to the baking dish. Mix sausages, vegetables, and hash browns together in the baking dish. In a large bowl, combine eggs, milk, salt and pepper and whisk until well combined. Pour this mixture over the other ingredients in the baking dish. (In the morning) Bake at 350F until the eggs are set, approximately 45 minutes. Top with remaining cheese and let cool slightly before serving. More make-ahead tips: • Set up the coffee pot the night before • Prepare a fruit salad and store it in the fridge • Bake and freeze some muffins, scones, or loaves and take them out to thaw on Christmas Eve. • Have jugs of juice chilling in the fridge overnight, ready for go-time! • Finally, keep things simple. There’s no need to put out an elaborate spread on Christmas morning. It’s about creating memories, not creating stress! 3 cups of your favourite veggies, chopped (peppers, onions, broccoli and zucchini work well) 12 large eggs, beaten 1 cup milk 1 cup shredded cheddar or Monterey Jack cheese Salt and pepper to taste

Fortunately, with a little planning and the right attitude, you can survive the upheaval of a kitchen renovation in style, even when that doesn’t seem possible. Remember that your dream renovation won’t happen overnight! Plan ahead Once you’ve decided to go ahead with your kitchen renovation, it’s time to get prepared. Remember that there’s a very good chance that you won’t have access to your kitchen for quite some time, so you’re going to have to make some adjustments to how you do things. Once the renovation is ready to begin, by following a few simple steps, you can make this adventure a little more manageable. Here are a few to consider; Create a temporary kitchen - Make use of small appliances for cooking and reheating food in your makeshift kitchen, such as a slow cooker, toaster, microwave, coffee maker, electric kettle etc. - Don’t forget to use your BBQ – any time of year! - Move your fridge to another room or purchase a mini fridge so you can continue to keep food cold. - Because you won’t easily be able to wash dishes, you’ll likely need to use disposable ones. Consider sustainable options, such as those that are fully compostable, recyclable, and biodegradable. Environmentally friendly options are available from many retailers. Understand that things will get dirty Kitchen renovations create a lot of dust, debris, and clutter. To help manage this during your renovation: - Close off entries to the kitchen to avoid having dust and debris navigate through the rest of your home. Hanging plastic drop cloths or a flat sheet where there are no doors can be helpful. - Close and cover heating vents and cold air returns to prevent dust and debris from getting into them. Most projects will need a little refining after completion, so after the major work has been completed, make a list of details that have been forgotten, are missing, or wrong. Your contractor may have to return to finish these off, so allow for this in your deadline. Once its complete - Celebrate your new kitchen! Every minute it took will be so worth it.
