Easter traditions from around the world In Canada, decorating eggs and searching for chocolates on Easter are time-honoured tra- ditions. Here’s a look at how this holiday is celebrated in other countries around the world. AUSTRALIA FRANCE On Easter Monday, spectators gather to watch dozens of cooks make a giant 15,000- egg omelette in the main square of Bessières, a small village in southwest France. This tra- dition can be traced back to the time of Na- poleon Bonaparte.

minutes, and season well. Set aside. 3. In a bowl, whip the eggs and cream. Salt and pep- per, then set aside. 4. On each of the half-cooked crusts, pour a quarter of the vegetable mixture. Set aside 12 pieces of zuc- chini. Crumble a quarter of the feta cheese into each dish, then do the same with the green onions and the egg mixture. Place a slice of Swiss cheese and three slices of zucchini atop each quiche. 5. Place the quiches in the oven at 375 F (190 C) for about 20 minutes. Garnish with fresh basil before serving.

Rather than a bunny, Australians have em- braced the bilby as their Easter mascot in an effort to raise awareness about this endange- red species. Chocolates of the long-eared marsupial are sold around the holiday, with proceeds given to conservation projects. ITALY On Easter Sunday, an ornate cart filled with fireworks is paraded through the streets of Florence to the Duomo Cathedral, where the archbishop lights the fuse during mass.

GREECE On the island of Corfu, Holy Saturday is marked by an old custom that involves throw- ing large clay pots off balconies in the centre of town. Visitors come from all over Greece to watch the event — it’s a smash!

FINLAND Dressed up as witches in colourful clothes and heads- carves, children go door to door on Easter weekend wishing their neighbours a healthy year. In exchange for a willow twig decorated with feathers, the little wit- ches are given a chocolate or other treat.

DIRECTIONS 1. Preheat the oven to 375 F (190 C). Using a rolling pin, flatten the dough until it’s 1 centimetre thick, then cut it into 4 equal pieces. Place each piece in its own 10-centimetre pie pan. Using your fingers, gently press the dough into the shape of the dish. Cut away the excess, then prick the dough with a knife in a few places to prevent air bubbles from forming. Place the crusts in the oven for about 10 minutes. 2.
