Hospitality Review: October/November 2024

Editorial

First established in 1973, Mures is a Tasmanian family- owned and operated business that specialises in fresh, local seafood. Founded by George and Jill Mure, Mures began in a small Victorian cottage in Battery Point. When they struggled to source quality, fresh, local seafood, George went fishing. Spending three days a week at sea catching fish for their customers and three in the restaurant running double shifts, George and Jill began Mures “hook-to-plate” philosophy. In 1987, they opened Mures Fish Centre on Victoria Dock in Hobart. Will and Jude Mure are the current driving force behind Mures Tasmania with their children Eve, Wilson and Jock, marking three generations of the family to have worked in the business. Mures incorporates two custom-built fishing vessels, Diana and Selkie, Mures Fishing processing facility in Cambridge, seafood wholesale division, three seafood restaurants on Victoria Dock (Mures Lower Deck, Upper Deck and Pearl + Co) and a gourmet seafood product and exclusive wine range. On behalf of the family, Will and Jude Mure said “We are a 100 per cent family-owned and operated Tasmanian business. For more than 50 years we have continued to strongly evolve and invest in Mures Tasmania and

are so proud to be part of the state’s growing tourism and hospitality sectors.

“We sincerely thank our customers, our staff and all the builders and contractors for helping us get through the last five months of disruption.”
