MARIA HOLMES, DJ’S FISH & CHIPS, PAIGNTON, DEVON 30 MINUTES WITH..

are so different from ours and very delicious. It’s also nice when we do get to go there as the owners are also dear friends of ours, which is a bonus. What side is a must with your fish and chips? Until owning our fish and chip shop I would have said mushy peas, but now I love it with curry sauce. I don’t know why, it’s just a lovely combination. If you could open a fish and chip shop anywhere, where would it be? Somewhere cold so it counteracts the heat from the range! Do you have a favourite restaurant? Yes, the Berryhead Hotel in Brixham. They serve fresh fish caught locally, it’s amazing. It’s also where we got married 10 years ago. Last month we celebrated our 10th wedding anniversary and they served us their mini fishcakes with homemade tartare sauce. Would you believe me when I say that we had fish and chips for our wedding breakfast? Perhaps deep down we knew that one day we would own a chippy! What is your go-to drink? OMG, I could drink this by the bucket loads, Disaronno Velvet. That first sip is just like tasting nectar, which is funny because I hate honey! What dish reminds you most of your childhood? Spaghetti bolognese. Mum would ask me to do the pasta and she would insist that I chuck a bit at the wall to see if it would stick, that way she knew it was cooked. We would always have this dish when we had foreign students stay with us. What is your guilty food pleasure? Anything chocolate especially Costa Coffee’s Millionaire’s Shortbread, getting my coat now…. What one piece of equipment would you love to purchase for your business? A proper coffee machine, however, if we did have one there would be no coffee left for the customers to buy. If you could have anyone join your team who would it be? No one in particular, just someone who is good with customers, hard-working and has a great sense of humour.

How did you get into the industry? it’s all down to my dearest husband, Paul. When Covid hit, both our businesses ceased overnight. One morning over coffee, Paul thrust his iPad to me and his words were ‘what do you think of this chippy?’. Recovering after choking on my coffee, I said, ‘let’s see it first’. Thinking that we wouldn’t get it, our offer was accepted 10 days later. So now, if anything goes wrong, I just say, it’s Paul’s fault!

What’s your favourite food? Anything milk chocolate. I can’t get enough of it, which is why I’m always on a diet! Is there a food you won’t eat? Oh yes, the one thing I can’t stomach is mushrooms, they remind me of slimy slugs (sorry

if you love mushrooms), and a close second is oysters. After that it’s porridge, just the smell makes me feel ill. Where have you had the best fish and chips? Drakes Fish and Chip Shop in Babbacombe, Torquay, I’ve never been disappointed. Their chips
