We love hearing about your travels! One of our clients, Cindy, has a zest for life reflected in her travels! At an age when many might prefer the comfort of familiar surroundings, Cindy packs her bags, often solo, and dives headfirst into adventures that many of us only dream of. Last year, Cindy took the trip of a lifetime. She began
her journey on Holy Island in England, joining an archaeological dig. This wasn’t her first dig, nor would it be her last. The excitement has brought her back to this spiritual place for three years in a row now. From there, she jetted off to Venice, where she explored her artistic side with fellow enthusiasts in a watercolor class. Right after that, Cindy found herself in Norway, chasing the beauty of the Northern Lights on a cruise. Cindy’s travels didn’t stop there. She returned home

just long enough to repack for the next leg of her journey — an adventure through Spain and Egypt. Once she returned, she took off again and spent time in Chicago and Michigan. Reflecting on her escapade, lasting nearly four months, Cindy shared, “It was nuts, but a lot of fun.” Travel is an important part of Cindy’s life. Before her husband passed away, she traveled often with him; before that, they took their children along with them. Exploring goes beyond sightseeing — she loves meeting new people and exploring. This year, Cindy’s itch for adventure will take her to Croatia and Slovenia, where she plans to venture alone for part of her trip. “If no one wants to see it, and I do, I just go,” she says. Her advice to anyone considering taking their own adventure is just to go. “What are you waiting for? Life is so short,” she says. “There’s so much to explore, so get out there and see it. Don’t be afraid to travel alone. Many groups on Facebook offer a bunch of inspiration for single women looking to travel. You can always start small with just a weekend getaway and branch out from there!” Cindy, your outlook on life and travel is infectious. 1/2 cup all-purpose unbleached flour
2 large eggs 2 tbsp water
2 cups plain bread crumbs 1/2 tsp mustard powder 1/4 tsp cayenne pepper
Lemon wedges
1. Pour 2 inches of vegetable oil into a large skillet over medium-high heat. 2. Cut cod into 4 servings and season with salt and pepper. 3. Place flour into a pie tin. Whisk egg and water in a second pie tin. Combine bread crumbs, mustard powder, and cayenne in a third pie tin. 4. Coat your fish in the flour tin, then the egg tin, then the bread crumb tin. 5. Set coated fish in hot oil and fry for 5 minutes on each side. 6. Serve with lemon wedges and enjoy! DIRECTIONS
